How to make it

  • Heat oven to 375 degrees.
  • Rinse chicken well and pat dry.
  • Place bird breast side up on rack in foiled lined pan.
  • Poke a whole lemon all over with a fork.
  • Insert into chicken cavity with few sprigs rosemary.
  • Squeeze juice o half a lemon all over chicken.
  • Roast uncovered 1 1/2 hours or untill juices run clear.
  • Season as desired.
