New Recipes







I've tried a couple of good recipes from Pinterest and wanted to share. Especially because they are super easy!


Cheesy Crockpot Chicken and Rice



This is SO easy and SO yummy! I prepped everything in the morning, turned the crockpot on and dinner was done. I already crave it again.



Ingredients
4 boneless skinless chicken breasts
1 large onion, chopped
1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
1 cup cheddar cheese
1 - 10.5 ounce can cream of chicken soup (regular or fat free)
1 -15 ounce can whole kernel corn, drained

Instructions
Place chicken in bottom of slow cooker. Scatter chopped onion over top. Spoon cream soup over top of that. Cover and cook on low 7-8 hours or on high 3-4 hours. A few minutes before serving, add in cooked rice, corn, and cheese. Stir to combine. Serve hot.

Creamy Cajun Chicken Pasta



This recipe comes so highly recommended that I wonder if my expectations might have been to high. It is yummy and easy to make but I felt like it was missing something. A freshness to it if you may. Like a squeeze of lemon juice and some zest? I don't know. The flavor was good. It just felt like something was missing to complete the flavors. Maybe fresh basil? I don't know. If you try it and figure it out let me know. I substituted fresh tomatoes at the end instead of cooking them. I also used fresh garlic. The recipe serves two so you may need to double to feed a family.



2 boneless skinless chicken breasts, cut into thin strips

4 ounces fettuccine, cooked

2 teaspoons cajun seasoning

2 tablespoons butter

1-2 cup heavy whipping cream

2 tablespoons chopped sun-dried tomatoes

1 green onion thinly sliced

1/4 teaspoon salt

1/4 teaspoon dried basil

1/8 teaspoon ground black pepper

1/8 teaspoon garlic powder (I used fresh minced garlic)

1/4 cup grated Parmesan cheese



Place chicken and Cajun seasoning in a bowl and toss to coat. In a large skillet over medium heat, sauté chicken in butter or margarine until chicken is tender, about 5 to 7 minutes. Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through. Pour over hot pasta and toss with Parmesan cheese.

Easy BBQ Crock Pot Chicken

I have to say, I LOVE Pinterest!! I'm finding the best recipes on there. Here's one I made last night.


BBQ Crock Pot Chicken

4-6 pieces boneless skinless chicken breasts (i threw them in frozen... even easier!)
1 bottle BBQ sauce (sweet baby ray's all the way!)
1/4 c vinegar
1 tsp. red pepper flakes (I didn't even have these, so I skipped it, and it was still delicious.)
1/4 c brown sugar
1/2 - 1 tsp. garlic powder

mix BBQ sauce with all ingredients listed under it. place chicken in crockpot. pour sauce over it and cook on low for 4-6 hours. you pretty much don't even have to stir it... how easy is that!?

I served it over rice. It is so yummy!!

Taco Soup

Here is the soup I made for our Fabulous Friday. This is Tammy Thompson's recipe, but I have tweaked it a little bit.

1 lb ground beef
chopped onion
2 cans petite diced tomatoes
1 can kidney beans undrained
1 can corn undrained
1 cup salsa (I use Pace Chunky Salsa, Medium)
1 packet taco seasoning

Brown ground beef with onion. Drain. Add remaining ingredients. Bring to a boil. Ladle into bowl. Top with cheddar cheese and sour cream. Serve with tortilla chips.

I put mine in a crockpot and cooked on high for about 2 hours.

Wendy's Chili

We love Wendy's chili and this recipe is close the real thing!


2 lb. Ground Beef, Browned
1-29 oz. Tomato Sauce
1 29- oz. Can Kidney Beans, Rinsed and Drained
1-29 oz. Can Pinto Beans, Rinsed and Drained
1 C. Onion Diced
1 C. Diced Celery
1 Can Diced Green Chilies
3 Medium Tomatoes (I used a 29 oz can of diced tomatoes)
1 Tsp. Cumin
2 TBSP. Chili Powder
1 1/2 tsp. Pepper
2 tsp. Salt
2 C. Water

Add all ingredients into crock pot. Simmer for a a few hours, or until celery is tender. Serve with grated cheese and tortilla chips.

Chops and Bean

I got this recipe a few years ago from Good Things Utah. It is yummy and it's a crockpot meal. Got to love those!

Chops and Beans

Two 1lb. cans pork and beans
1/2 cup ketchup
2 slices of bacon, browned and crumbled
1/2 cup chopped onions, sauteed
1 Tablespoon Worcestershire sauce
1/2 cup firmly packed brown sugar
4-6 pork chops
2 teaspoons prepared mustard
1 Tablespoon brown sugar
1/4 cup ketchup
One lemon

1. Combine beans, 1/2 cup ketchup, bacon, onions, Worcestershire sauce and 1/4 cup brown sugar in slow cooker.

2. Brown chops in skillet. In separate bowl mix together 2 teaspoons mustard, 1 Tablespoon brown sugar and 1/4 cup ketchup. Brush each chop with sauce then carefully stack into slow cooker, placing a slice of lemon on each chop. Submerge in bean/bacon mixture.

3. Cover. Cook on low 4-6 hours.

I put the lemon on the chops the first time I made it. It was a very prominent taste in the final dish. I haven't put the lemon on the other times I have made it.

Fuss-Free Fiesta Chicken

This is a recipe from Kenzie Richardson that most of us should have. I thought I would add it on this site for those that haven't tried it yet. It's a crock pot dish. I LOVE the crock pot and only wish I had more recipes so I could use it more often. It's so nice to be able to throw things together in the morning and not have to think about dinner the rest of the day. The hardest part is remembering to make it in the morning so there is enough time before dinner.
This is a yummy dish that makes a ton! Be prepared for leftovers.
Here are all the ingredients ready to cook.

And this is after 8 hours and after I shredded the chicken and added the refried beans.
Thanks to all of your suggestions, we tried those amazing uncooked tortillas. YUM!! Marty was in pure heaven. They reminded him of the tortillas he ate so much in Mexico on his mission. He told me I should buy these kind from now on. :)

Here is the recipe for the chicken:

3 chicken breasts (frozen or thawed)
1 can black beans with juice
1 can corn with 2/3 of juice
1
can mild green chilies with juices
1 cup salsa
1 packet taco seasoning
1 can refried beans

In crockpot combine first 5 ingredients. Cover and cook on low for 8 hours. Carefully remove chicken breasts and shred with 2 forks. Return shredded chicken to crockpot. Add refried beans and mix thoroughly. Serve immediately.

I also had purchased some avocados so we made some Guacamole and used Heidi Cole's recipe. BTW, thanks Heidi for sharing this recipe. We love it!! Brooklyn could drink the stuff.
Guacamole

2 avocados
2 Tbsp salsa
1-2 Tbsp fat free sour cream
dash garlic salt


Scrape out inside of avocados and smash up. Add salsa, sour cream, and garlic salt (to taste). Add more sour cream if you like it creamier.

Creamy Chicken Tacos

I got this Crock-Pot recipe when I first moved into the ward and didn't know anyone. They were handing them out in Relief Society so of course I took a copy, this is Tia Chapman's recipe that we make all the time.

Lay 3-4 chicken breast in your crock pot

Cover with about 1 1/2 cups salsa


Let cook on low 6-8 hrs or on high 4-6. About a half hour before serving shred up the chicken and add 3/4 cup sour cream keep in crock-pot until you are ready to eat.

Stuff into soft tortillas and garnish with shredded cheese and/or lettuce.
