Quick Cioppino

After a long weekend of staying up late and eating junk food (fried chicken from the Dutch on Sunday morning with Alice), I thought Jamie and I needed some soup. I saw this recipe for a quick cioppino on Epicurious and it looked perfect - I altered it slightly with adding in some clams and letting the wine cook down a little bit. It's pretty healthy and has a really hearty, stew flavor from the red wine. It's great as a winter meal with some toasted sour dough bread and you get so many nice, chunks of seafood. And I got to use my beautiful, new Le Creuset pot, so I was a happy little housewife.

Ingredients:

1 fennel bulb, halved and sliced
1 medium onion, halved and sliced
3 garlic cloves, minced
3 tablespoons extra-virgin olive oil
2 bay leaves 
1 1/2 teaspoons dried thyme

Bourgeois Pig

I met up with my friend Lara last night for dinner and we went to Bourgeois Pig. I'd walked by it several times and always wanted to try it. It was very cute! And Wednesday is a great night to go because they have $6 mussels all night! It's really Gothic in there (decor-wise) and eclectic with lots of reds and blacks and velvets and mismatched chairs, but super cute and fun. We got a champagne punch bowl, which I loved! So perfect for dinner with girls, or later at night for a romantic date dinner. It's fun to ladle your own punch into the little glass mugs they give you.

Schiller's

One of my very best friends, Alice, was celebrating her birthday last weekend on the Lower East Side at Home Sweet Home (super fun and great dancing music). Another one of my besties (Kara) and I decided to grab dinner beforehand at Schiller's. I hadn't been in a while, and even though it's not new or anything, Schiller's is always fun and always hopping. I ran into two other friends eating there and the atmosphere was buzzing. We were a little late to the reservation because of traffic on Houston, so we grabbed a drink at the bar while we waited a few minutes.
One of my favorite things about it is their wine list, divided into three brief sections: Cheap, Decent, and Good. We went for a "Decent" red. They bring it over in a clear glass bottle with little glasses.

Indoor Clambake

I've been dying to try this all summer. The Lobster Place and Clamman both have pre-packaged, all ready versions, but I was tempted by the chorizo, onions, and garlic in Martha Stewart's recipe. It was a great, fun, and surprisingly easy meal. Good for a special occasion, or, in my case, just having girls over for dinner. The dipping sauce is delicious and much healthier than just a bowl of melted butter. So summery and festive!

The mussels were tender and delicious and the lobster was cooked perfectly. The little knuckles just melt in your mouth. The timing on this recipe is what makes everything cook perfectly. When cracking into the lobster claws, prepare to get a little messy. The corn tastes great dipped in the sauce and sprinkled with salt.

(for 4 people)
Ingredients:
1 onion, quartered
3 garlic cloves
1/2 bottle of pale ale beer (I used Brooklyn Summer)
1/2 cup water
3/4 lb new potatoes

Thai Style Mussels


I had friends over for dinner last night and wanted to cook something that wouldn't be terribly expensive or time consuming and I settled on mussels. They're cheap, easy to cook, and generally delicious. This Thai-style version is so tasty - lots of flavor in the rich, orange broth. It's a little spicy but not overwhelmingly so, and has a great zing from the limes and earthiness from the red curry paste. It's also pretty healthy. Definitely going to make it again - perfect week night meal - plus Jamie was jealous he missed it, so need to repeat for him too.

Mussels with tomatoes

I love mussels. I make them all different ways and they are a quick, tasty, pretty healthy meal. I tried a slightly new way to make them this weekend on my seafood binge and they were a big hit. Almost every mussel recipe calls for shallots because they give such a great flavor to the broth. This time I used a mix of shallots and garlic--yum. These are almost just the classic mussels in white wine, but the tomatoes and the saffron add a new twist and give the broth a beautiful orange color.

(Serves 4 as a starter or main with a big salad or crusty bread)

Ingredients: 
4 pounds mussels
1 can whole tomatoes, juices drained, chopped by hand
3 springs thyme
2 large shallots, finely chopped
2 garlic cloves, finely chopped
olive oil
1 pinch saffron
about 1/2 cup white wine
fresh chopped parsley

Directions:
In a large pot, saute the shallots in a little olive oil until they start to soften and add the garlic. Stir until the garlic is fragrant and then add the tomatoes, thyme and saffron. Mix that all together, then add the wine. Cook it a little so all the flavors blend and the alcohol cooks off. If the broth looks too dry, add a little more wine and maybe a little water. Add the mussels and put on the lid. Shake the pot around so all the mussels spin and move a little. Do this every 30 seconds or so to make sure they are cooking evenly. Turn off the heat right when the mussels open--this is the perfect amount of cooking time so they'll be tender and juicy. Scoop the mussels and broth into bowls and garnish them with the parsley. Great to eat with a crusty piece of bread.
