Menu Plan Monday ~ June 9



This weeks menu will consist of:

  • eating leftovers from the weekend
  • grilled bbq chicken salad with sweet potato fries and fruit salad
  • bbq chicken quesadillas with mexican rice and leftovoer fruit salad
  • grilled steak with baked potatoes and salad
  • chicken stir fry with fried rice

Special treats:

  • Pumpkin bread - new recipe
  • strawberry shortcake

MPM - Week of June 2, 2008


Getting back on track with the menu planning.
Meals for the week:
  • Spaghetti, salad and garlic bread

  • BBQ chicken salad sandwiches and baked sweet potato fries

  • Cobb salad

  • Grilled chicken and steamed veggies

  • Lasagna made with leftover spaghetti sauce

Desserts: Banana Split Pie from Jello-Cool Whip Recipe Cards and Choco Banana Bread (new recipe)

Menu Plan Monday on Sunday ~ March 17, 2008



Sunday:
*Juarez Chicken enchilladas (huge batch since I need to make them for DDs Mexican meal at school and we are having for dinner too)
*Fruit salad

Monday:
*Potluck chicken casserole (recipe from The Ultimate Chicken Cookbook - cut in half - using leftover chicken from enchilladas)
*salad
*crescent rolls

Tuesday:
*grilled pork chops
*seasoned baked potatoes
*fruit

Wednesday:
*chicken and shells dinner (recipe from The Ultimate Chicken Cookbook)
*cucumber and tomato salad

Thursday:
*Stir-fried chicken and noodles (recipe from The Ultimate Chicken Cookbook)

Friday:
*Vegetarian Broccoli Cheese Soup
*green jello with crushed pineapple
*rolls

Saturday:
*marinated beef ribs
*mashed potatoes
*steamed green beans
SPECIAL TREATS:
*Lemon bars for event at school
*Coconut pineapple bars

Menu Plan Monday on Sunday ~ February 24


Items for this weeks menu:
  • Hashbrown breakfast pizza for dinner with fruit

  • Grilled chicken with seasoned baked pototoes (march light and tasty) and salad

  • Chicken and rice burritos (carryover from last week)

  • Salmon patties and rice pilaf or church fish fry:)

  • Potato soup, salad, and biscuits

I ended up not following a lot of last week's menu. We went out for dinner Friday night with DH's sister and her husband. DD wanted breakfast for dinner so we did that Thursday night. I wasn't feeling good one night so it became fend for yourself. I didn't make any of the treats because I was not feeling great all week. I am praying for another snow day this week though it isn't really looking promising:(

Menu Plan Monday on Sunday ~ February 17


This week's dinners:
  • Chicken noodle soup, salad, and biscuits
  • Chicken and rice burritos (new recipe)
  • Chicken quesadillas and cucumber and tomato salad
  • Peppy Parmesan Pasta (new recipe), fruit and garlic bread
  • Spinach and potato fritata (new recipe)
  • salmon patties, microwave potatoes, and green beans

Special treats:
**making both and giving half of each to the fish fry. I will also give some to my mom and dad as a special treat:)

  • lemon bars
  • chocolate chip cookie bars

Menu Plan Monday on Sunday ~ February 10



This is a crazy week in the life of a teacher. I have conferences all week ~ before school, after school, and all day Thursday. Friday is off, but we go to DDs orthopedic surgeon for the first appointment to schedule surgery. I think we will go to Red Lobster for lunch since we will be down there.

Tuesday we are having potato bar at school. My floor loves food and we plan all sorts of things around food. I need to take toppings so I think I am going to make a broccoli and ham mixture I saw in Paula Deen's Quick and Easy Meals magazine.

Weekly Meals:
  • Smokey Macaroni with fruit (new recipe ~ uses little smokies and cheddar cheese soup)
  • Taco ring with lettuce and other toppings
  • Salmon patties and Italian Herb Potato Steamer (made by McCormick seasonings ~ DH and DD both love them) with fruit
  • Soup - not sure what kind yet
  • Heart shaped pizza from Papa Murphy's and salad

Special Treats:

  • Peanut Butter Chocolate Chip Bread (made today) *I made it as four mini loaves.
  • Rocky Road Brownies and Puppy Chow for the student council bake sale

I made cheesy broccoli cauliflower soup with vegetable broth last week, and it was so yummy. I liked it better than when I make it with chicken broth. We had it Wednesday and Friday nights. We were going to do a fish fry, but DD was not feeling well and I really didn't want to go out in the cold. I am soooo tired of this freezing weather. I am sooooo ready for spring.

Menu Plan Monday ~ Jan. 28


Plans for this week include:

Main Dishes:
*Italian Sausage Soup (made Sunday night for dinner - awesome)with salad and garlic toast
*Caeser Salad Pitas and baked sweet potato fries
*Clean the Freezer Vegetable Cheese soup (adding chicken)with sweet honey biscuits and salad
*Sour Cream Chicken Enchiladas
*leftover night or two

Special Treats:
*Peanut Butter Chocolate Chip Loaves
*Out of this World Cake (made and half given to my mom and dad)

Hannah has art and piano classes this week. I actually don't have any events this week, but I do need to finish the math curriculum for fifth grade. DH gets off of midnights tomorrow, but then I think he goes to 4-midnight. Possible snow day (shouldn't say or write it) on Thursday.


I need to finish up the student council recipe book for the auction also. I will do that tomorrow ~ it is due Friday afternoon. The auction is Saturday. DH signed us up to go. I really didn't want to go this year. Oh well...

    I am going to do my menu plan differently. I think I am just going to list what I want to make and not specify a day. The day thing just doesn't seem to work lately.

    Breakfasts: Oatmeal or bagels

    Lunches: leftovers or ww meals

    Dinner: Spud Special Soup from Org. Junkie
    Grilled chicken and steamed veggies
    Spaghetti and garlic bread
    Chinese Style Chicken Breasts

    Desserts: O'Henry Bars and chocolate chip mini muffins

    Out to eat and to a movie for dinner

    Tuesday: New Year's Day lunch at mom's house - I will make chicken enchilladas and a dessert

    Wednesday: Spaghetti with whole wheat noodles and garlic bread

    Thursday: smoked beef brisket (crockpot) with baked sweet potato fries and steamed veggie

    Friday: Leftovers

    Saturday: chicken lime tacos (crockpot) with all the fixings

    Menu Plan Monday ~ Dec. 24


    I have a menu planned for the next couple of days, but then we are getting company and going to a wedding so it becomes shaky. Our company likes to eat out a lot so that is what we will do Thursday, Friday and Saturday (the wedding is Saturday afternoon).
    Monday (Christmas Eve) - Baked potato soup, sausage and spinach roll up, salad, dessert (still trying to decide what to make) My parents are coming over for dinner.
    Tuesday (Christmas Day) - My sister is hosting Christmas dinner at her house. I am responsible for making sweet potato souffle, pumpkin tarts, and green beans (not the casserole type, but something much better)
    Wednesday - Chicken noodle soup and beer bread

    My parents, sisters and their families are coming over for Labor Day. My mom is bringing the ribs and I am making everything else. My sisters are each bringing a side dish.

    Sunday - Pizza bake and fruit

    Monday - Family dinner: Featherbone ribs in the crockpot, swiss potatoes, 5-cup salad, and beer bread.

    Tuesday - leftovers

    Wednesday - Ann's Beans and Beef (Church Potluck Supper Cookbook by Elaine Robinson) with cucumbers and tomatoes

    Thursday - Chicken Meal-in-one (Quick Cooking 2001 Annual Recipes) and corn muffins

    Friday - leftovers

    Saturday - Deep-dish pizza and salad

    Special Treats: Strawberry Cheesecake Trifle and chocolate chip banana bread

    Menu Plan Monday ~ Week of August 20



    Last week was a horrible week for me. The first week of school hit like a ton of bricks. There were technology issues and DH was out of town and I was so darn tired, I just couldn't cope with anything. So I am repeating a few items again. I spent 8 hours at school today organizing, getting my email back up, finishing up other odds and ends. My lesson plans look beautiful, my website is fully updated for the week. I am READY for tomorrow and will get a jump on next weekend since it is such a busy one with us hosting my DH's family ~ approx. 50 of them!


    Monday - Bacon Cheeseburger Rollup


    Tuesday - Cheese quesadillas with salsa and sour cream (open house at school)


    Wednesday - Spaghetti (sauce from freezer), salad, and garlic bread


    Thursday - Kielbasa and potato bake (Grandma was sick last week)


    Friday - Grilled chicken, green beans, and cheesy potatoes


    Saturday - Card party (Papa John's pizza and other bad for you type foods)

    Menu Plan Monday ~ Week of August 12

    Wednesday is the first day of school and my DH is traveling this week for work. We are going to have easy to prepare items this week so that I can slowly work myself back into the routine. I am also trying to make it to the gym every night. I am not teaching language arts this year so I shouldn't be as stressed.

    Sunday ~ bridal shower (blimpie subs, veggies with dip, fruit with dip, cake, mints, sherbert punch, pickle dogs, chips, and cheese dip)

    Monday ~ foil dinners (hamburger, carrots, celery, potatoes, tomatoes, and peppers) with fresh steamed corn

    Tuesday ~ Bacon Cheeseburger Rollup (Thanks Venessa)

    Wednesday ~ Kielbasa and potato bake with salad and brownies (grandma is coming to celebrate the first day of school)

    Thursday ~ Cheese quesadillas, salsa and fruit
    Friday ~ homemade pizza and salad

    Saturday ~ something that I don't have to make

    Menu Plan Monday Week of August 5 to 11



    Last week, we did not follow the plan. I was teaching summer school and DH was working four to midnight. I just did simple things since I was so worn out from getting back into my 10 month routine. I was really dragging all week. This week I have inservices and such, but it should be better; I will be getting my "school" routine back. So I am going to put a couple of last week's menus on this weeks. I really want to try them. I didn't plan lunches this week. I figure we will either be eating leftovers or sandwiches. DH likes to do Godfather's pizza buffett so I know him and DD will be headed there one day. He is working 4-midnight, off for two days and then midnight to 8 through the weekend.

    Sunday: Chicken Salad with a Twist
    Monday: Baked potatoes topped with chili and cheese
    Tuesday: Chicken and rice skillet
    Wednesday: Bunco ~ fend for yourself
    Thursday: Pepper cheese patties with potato salad and fresh corn
    Friday: Hamburger packets on the grill (hamburger and fresh veggies in foil and then grilled)
    Saturday: Taco skillet

    Menu Plan Monday ~ Week of July 16



    My daughter goes to camp this week and DH is working 4 PM to 12 Midnight. On Friday we are leaving for Chicago for the weekend. I have plans to do lunch with friends and a dinner date with DD's godmother.
    Monday: Oven Fried Chicken Chimichangas (I sent my sister the recipe last week and she said they were delicious. Her DH who has a thing against chicken even liked them.)

    Tuesday: Lettuce (romaine) salad with grilled chicken

    Wednesday: Leftover lettuce salad

    Thursday: Homemade paninis, oven fries and fruit salad

    Friday - Monday: Out of Town

    Oven-Fried Chicken Chimichangas
    2/3 cup picante sauce or your favorite salsa
    1 teaspoon ground cumin
    1/2 teaspoon dried oregano leaves, crushed
    1 1/2 cups cooked chicken, chopped
    1 cup shredded cheddar cheese
    2 green onions, chopped with some tops (about 1/4 cup)
    6 (8 inch) flour tortillas
    2 tablespoons margarine,
    meltedshredded cheddar cheese, for serving
    chopped green onions, for serving
    picante sauce, for serving
    Mix chicken, picante sauce or salsa, cumin, oregano, cheese and onions.Place about 1/4 cup of the chicken mixture in the center of each tortilla.Fold opposite sides over filling.Roll up from bottom and place seam-side down on a baking sheet.Brush with melted margarine.Bake at 400°F for 25 minutes or until golden.Garnish with additional cheese and green onion and serve salsa on the side.

    Saturday: Out with friends to Granite City (a new brewpub)

    Special treats: Pineapple - Zuchhini Bread; chex school fuel
