Sev uttappam


Ingredients

Dosa batter
2 small chopped onions
Plain sev
Finely chopped coriander leaves
Oil

Mix chopped onions, plain sev and coriander leaves together. Heat tava and spread the dosa batter to a thick uttappam and then spread the mixture over it. Spread a little oil in the sides. When the bottom starts getting brown, turn over slowly and cook on low flame for a minute. Serve hot with green chutney.

Mixed veg mini uttappam


The recipe is just the same like normal mixed veg uttappam..Just added some chopped onions and coriander leaves and made them in small sizes to fit into lunch box..

Mix Dal Veggie uttapam

I was thinking we have been eating urad dal uttapam always. What happens if we mix some dals and make a uttapam with veggies which kids normally dont eat. This is a very nutritional breakfast with the dals and all the vegetables. So one fine day I made this for breakfast and saw that all the uttapams were over. Check out the recipe.

Ingredients

1 cup Moong Dal (greengram dal)
1 cup Urad Dal (blackgram dal)
Very finely cut cooked Vegetables of your choice.(Carrots, cabbage, corn, peas etc)
1/2 tsp Jeera/cumin seds
Pinch of asafeotida/hing
1/2 tsp mustard seeds
3-4 Curry Leaves
2-3 Cut green chillies
1/4 cup Coriander Leaves
1/2 tsp crushed ginger
Salt as per taste

We dont eat onion so I haven't added any. If you like and eat, you can add cut onions also.

Soak the urad dal and moong dal together with little methi seeds may be 4-5 seeds for about 8 hours and grind the dals to a smooth batter. Leave it overnight to ferment.

In a pan add a little ghee, jeera and the mustards seeds. Wait until they splutter. Then add asafoetida, curry leaves, cut green chillies and crushed ginger. Fry well and add this seasoning to the fermented batter and mix well. Cook the vegetables of ur choice and add them to the batter. Finely cut some coriander leaves and add them to the batter. Also add some salt as per your taste. Mix the batter well. The batter should be like the dosa batter consistency.

Heat the laddle and take a spoonful of the batter and pour it on the laddle. Do not spread it like a dosa - just move the laddle so that it remains thicker. Spread some oil on the sides of the uttapam. Close the laddle with a lid. Then turn it on the other side and wait till the other side gets cooked. Take it out on the plate and spread some ghee if you like. If you dont apply ghee also it tastes good.

Serve it hot with coconut chutney.

Tomato Uttappam



Ingredients

Dosa batter
2 finely chopped tomatoes
Finely chopped coriander leaves
1/2 tsp green chilli paste
Bit of ginger paste

Mix tomatoes, coriander leaves, ginger paste and green chilli paste together.

Heat tava and pour a ladle full of batter in the centre. Spread it to a thick round. Spread the tomato mix evenly and press it a bit. Add a little oil in the sides and cook till brown on the lower side of the uttappam. Slowly turn it over and cook on other side as well.

Serve hot with chutney/sambar.

Mixed vegetable uttappam




Ingredients

Dosa batter
1 cup mixed vegetables (finely chopped and cooked carrots, beans, cabbage)
Oil

Heat the dosa tava and pour in a big ladle of the batter..dont spread it thin like normal dosas, it should be thick. Spread out the mixed vegetables on the uttappam and also some oil on the sides.

When one side is cooked well, slowly turn over the uttappam and cook the side with the vegetables. Make sure you dont burn the vegetables..Cook on low flame to ensure even cooking.

Serve hot with chutney/sambar of your choice.

Carrot Uttappam


After cabbage uttappam with leftover cabbage curry...now here is carrot uttappam with leftover carrot curry cooked with a different masala.

Ingredients

Dosa batter
1 cup chopped and cooked carrots
2 tsp oil
1/2 tsp mustard seed
1/2 tsp bengalgram dal
1/2 tsp blackgram dal
Salt to taste
Few curry leaves

Masala powder (dry roast and grind to powder)
1 tsp coriander seeds
1 tsp bengal gram dal
1 tsp blackgram dal
2 red chillies

Heat oil, add mustard, bengalgram and blackgram dal. When it splutters, add curry leaves, cooked carrot, salt and masala powder. Cook till all the water is absorbed.

Spread out a thick dosa like for uttappam and spread the carrot all over. Add 1 tsp of oil in the sides. When it is cooked, turn on other side and cook.

Serve hot with chutney or sambhar of your choice.

Peas Uttappam with Wheat flour


Peas uttappam is usually done with the normal dosa batter. But for a change I tried it out with wheat flour and it worked out well. Here is how i made it...

Ingredients

1 cup wheat flour
1/4 cup rice flour
Salt to taste
Oil
1/2 cup cooked peas

Make a thick batter of wheat flour, rice flour and salt and leave it aside for 15 minutes.

Heat tava and make a thick dosa like uttappam and spread out some cooked peas over it. Press the peas into the uttappam so that it doesnt fall out when turned. Spread a little oil in the sides and let it cook well. Turn and cooked on the other side as well.

Serve hot with chutney of your choice or sambar.

Cabbage Uttapam




Leftover cabbage curry converted into cabbage uttapam

Ingredients (Translation)

Dosa batter
Dry cabbage curry
Oil

I prepared dry cabbage curry for rice by chopping it finely and pressure cooking it with very less water. Then tempered it with mustard, bengalgram dal and blackgram dal and added salt, turmeric powder and a bit of garam masala powder.

Heat tava and spread out a big ladle of dosa batter on it, making a thick dosa. Spread out the cabbage curry covering the uttapam and press it lightly so that it doesnt come out. Add some oil in the corners and cook well. When one side turns golden brown, flip it and cook on other side as well.

Serve hot with chutney or sambar of your choice.

Onion and carrot Uttappam


Ingredients (Translation)

2 big onions sliced into fine pieces
1 grated carrot
1/2 tsp ginger paste
Finely chopped coriander leaves for garnishing
Dosa Batter
3 tsp oil

Mix the onions, carrot, ginger paste and coriander leaves well.

Heat the tava and add a big spoon full of dosa batter and spread in circular motion. Dont make it thin like dosa...let it remain a bit thick. Spread out the onion, carrot, ginger, coriander leaves mixture on it covering all areas and press it slightly into the batter. Add 2 tsp of oil around the uttappam. When one side turns golden brown, slowly turn it and cook on other side as well for a minute.

Serve hot with any chutney and sambar. If you want to serve only onion uttappam, just leave out the carrot, rest of the procedure is same. However adding carrot is more tastier and healthier too.
