Homemade Vegetable Broth Powder

I'm so excited to share this!  I use Vegetable bouillon type powder in a lot of my recipes. It's really hard to find a brand that doesn't contain MSG (most all bouillon's do even when they say they don't some hide it under another name).

Making it this way is just as tasty, much, much cheaper, and I know for certain it does NOT contain anything I don't want it too especially MSG!  I can't take credit for the recipe so I will be sure to give credit where it is due!  Traci gives this recipe away so I'm sure she won't mind if I post it!  I have not tried her other recipes yet but I'm excited too.  Be sure to check below for her book!   

I put in all optional ingredients it smelled so good I had to taste just the plain powder.  It tastes just like chicken broth to me!  And it's even better in a recipe! ;)  Also I'm sure I have mentioned this before but for those of you who may not know Nutritional Yeast is NOT bread yeast!  It is yellow flakes you can find it at pretty much any health food store usually in the bulk foods section.

NOTE: I have had others tell me that they make it without the nutritional yeast and it's still super yummy!


Vegetable Broth Powder
2 cups Nutritional Yeast
1/2 cup Real Salt
2 Tablespoons onion powder
1 Tablespoon turmeric
2 teaspoons dried dill weed
2 teaspoons marjoram (optional)
2 teaspoons dried powdered lemon peel (optional)
1 teaspoon celery seed
1 teaspoon basil
1 teaspoon powdered thyme
1 Tablespoon dried parsley

Place all, except parsley, in a blender in the listed order. Blend until powered together. Add parsley and pulse to chop. Store in an airtight container indefinitely in the cupboard. To make veggie broth, add 1 tbsp of powder to every quart of water.

Just this weekend I think I may have been told about this book....I was looking at my chicken broth bottle, thinking...MSG alert, MSG alert, and looking in my providential living cook books all with host of from scratch recipes, all with no broth recipes, and how many recipes call for broth! I am so excited to try this! Also I am excited to start trying some of these. We did veggie burgers this week and the kids didn't like as much as burgers but still ate quite happily! ;)

Oh, yeah, question, what is nutritional yeast, what does it do, and is it to be found at any health food store? Can I try it with a normal yeast (with less health benefits, but as a starting out point)??

Emily: Nutritional Yeast is a cultured yeast usually grown on sugar cane or beet molasses. Very high in vitamins and minerals and a source of B-12. It is inactive and is very very different from regular bread yeast! You can not substitute it! It would be terrible! It just simply wouldn't work and it would be gross.

You would be better off trying the recipe adding more seasonings and spices and no yeast of any kind. But yes you should be able to find it at any health food store.

I cannot stomach nutritional yeast in the least, I can taste the stuff from a mile away. So can I leave it out? What could I substitute it with? Could I make the mixture then add some arrowroot powder to spread it out or thicken it? Any ideas would be great.
Also we made some Macaroni and Un-cheese for dinner tonight and it was to die for. It was made with Butternut Squash- you'll have to check it out on my blog.

Courtney: It really doesn't have the Nutritional Yeast flavor like other things do it really does taste like broth at least to me. But I'm sure you could leave it out I mean all the other bullion type things I have looked at don't contain it. Read some ingredients and see if you can't formulate your own healthified version without the Nutritional Yeast.

You may be able to use the arrowroot powder although very much will give it kind of that flavor and it will have the thickening qualities but that really isn't usually a bad thing for soups etc. ;) I wondered maybe about the egg replacer too it pretty much just potato starch. Not sure but I am sure you can make your own somehow without the Nutritional Yeast! Excited to see what you come up with! ;)

I have been making my own broth powder for awhile now too, especially after reading in a couple of different places that yeast extract is another hidden term for MSG. The only "issue" with making my own is that it's not quite as flavorful as the broth powder you can buy, so more is needed to obtain the same flavor (1+ tbs instead of 1 tsp per cup of water). I also usually need to add more salt to the recipe. I'm excited to try your recipe sometime too.

Thanks for answering my questions Tammy, one more quick one for you, when you've taken St. John's Wort, have you find it fine with nursing, and did you use how many with after birth pains/how frequent? (If you remember) :) Thank you cutie! I am trying a couple of your recipes this week and excited to try them out, thanks for posting so many.

Emily: I only took it for a few days after giving birth to help with afterbirth pains. I personally felt that it helped and didn't notice any problems with it associated with nursing. It seems like I just took 2 capsules 2 or 3 times a day or as needed. I would usually take it 5 to 10 minutes before nursing since the nursing a lot of times will bring on those afterbirth pains.

So what recipes did you try? And how did your family enjoy them?

Monzerrat Reyes: Real Salt is a brand name of a sea salt from an ancient sea in Redmond UT. It's my favorite salt but any kind of sea salt will work just fine.

Saw you linked to this today and thought I'd profess my love for it. I made this last year and just ran out. I winged it today but tomorrow I need to make another batch. It is exactly my style. I love not needing to make broth and still being able to add rich flavor without the expense of can after can of expensive broth. Thank you!

I do have one question for you though...

I was reading up on Nutritional Yeast. I purchased some from a reputable food coop. I read their FAQ page, and it states that their nutritional yeast has "free glutamic acid" in it. This is basically the non-salt form of mono-sodium glutamate (MSG). I haven't checked other nutritional yeast products, but I'm guessing it's added to most if not all on the market.

I was just wondering if you have heard of this or if you get nutritional yeast from somewhere without glutamic acid in it?

I might just try the recipe without it.

Katie, The nutritional yeast I get does contain glutamic acid that is an amino acid that occurs naturally note that it is not the free glutamic acid I would not purchase nutritional yeast with free glutamic acid as that is more of an MSG form an not naturally occurring.

Oh by the way if you are worried about it I have had people who just don't like the taste of nutritional yeast try this recipe without it and said that it works great and is very tasty.

Isn't 1/2 cup of salt a lot of sodium? If you are trying to watch sodium in your diet, is there anything else that can be used to bulk the recipe up? Or would you just use less powder in reconstotuting?

Unknown: It isn't as much as it seems since you only use 1 Tablespoon of the British powder per quart of water. Besides that our bodies need sodium it just needs to be the right kind that is why I use Real Salt and try to stay away from refined table salt.

If you feel that even with real salt it is too much you could try adding some dehydrated celery powder. Celery is a great source of natural sodium and you could sub out or for some or all of the salt.

it's a great one! I make something similar but with garlic. Yum! Did you know you can also prepare very thin and crispy tomato leathers and then store them in bags for a long while? I add a few tomato crisps to add taste to my soups, but my kids love them as they are and steal the crunchy bits before I manage to use them all!

Hello I have my own veggie chikn broth (powder)recipe that I love...but... nutritional yeast is really expensive. I am currently scouring the web to find the best bulk deal, but that led me to think that maybe it would just be cheaper to find prepared veggie chickn broth. So far the broths I've looked at had salt as the first two ingredients...yuck. Have you actually priced out your recipe and compared it to a ready-made buillon? It's one thing to have to pay more to make your own if that is the only healthy option, and another thing altogether to make your own thinking it's cheaper, when it is actually not.

Veggie Mom: I have yet to find an all good ingredient bouillon....there are always undefined ingredients like "natural flavors" and "yeast extracts" what are those anyway? Plus the homemade version tastes much better in my opinion.

Nutritional yeast does seem quite expensive from six clear to ten dollars or more a pound. But it is very light so one pound is quite a bit. I haven't crunched the numbers in a while but when I buy my stuff in bulk and figure it out ounce for ounce I still feel like it's still cheaper overall. Especially if compared to a product of equal quality which is very hard to find. Yes the cheap stuff with MSG probably costs much less but is by far an inferior product that I don't really even consider to be food.

Also I know some people choose to leave out the nutritional yeast and still say it works really well.

Thank you Tammie. What is your cheapest source that you have found? I can't imagine leaving out the nooch...it really adds to the flavor.

BTW, Since I was all over the older posts, I was suddenly shocked to see your daughter married. The pictures were very sweet! How old (and how many?? Still four??) are your kiddos these days?
