Mug cake are seriously a life saver if you have some hungry tummies around you especially for snacks or else to please some sweet cravings after a meal. 2minutes Microwave Idli
Idli, this savoury cake is every's South Indian's favourite especially for their breakfast, its quite a staple food for Tamilians. Been born and brought up in Tamil Nadu, i have been pampered with this healthy and nutritious gluten free savoury cakes almost everyday in our menu. Obviously i do prepare idlis often at home though the climate in Paris doesnt help much for the fermentation. However it never stopped us to prepare this gluten free cakes at home. I have been posting different dishes since two days with idli batter in different ways. After a super filling sandwich and baked idli muffins, my today's post goes to aneasy breezy microwave cooking. A prefect dish to make if you are living alone or bored to cook just for you as this dish calls for just 2 minutes to get ready.

Eggless Bread Pudding In Mug
I have rarely seen people saying no to bread pudding, especially in my place, kids love bread pudding with or without eggs. Obviously if my bread basket have stale breads, i'll look for an opportunity to make bread pudding, this time i had some leftover baguette slices at home. Instead of baking bread pudding, i just tried out making an eggless bread pudding with an easy breezy preparation. Trust me this eggless bread pudding cooked in microwave oven makes a quick dessert to relish after a heavy meal. Just few bread chunks, a tablespoon of custard powder, milk and sugar, vanilla essence is quite enough to dish out this ultimate pudding with chocolate chips.

Eggless Vanilla Mug Cake with Milk Chocolate
Nothing can beat a simple,quick and easy breezy vanilla cake though i love chocolate cake. Last weekend we had a family get together and everything went well, had loads of funs, enjoyed some gossips and obviously lots of foods and cakes. Back home, we seriously want to go under diet, yes we had loads of foods and had almost 2kgs of sugar in form of cakes, desserts and icecreams. Had couple of salads and soups just for two days, the third day everyone at home started complaining that they need something sweet to satisfy their sweet tooth, hence i just prepared this quick single serving mug cake just to satisfy them. Yes this cake is quite enough to make them happy as everyone had their limited share of this cake, a spoon per person. A prefect way to maintain our diet rite.

Eggless Oatmeal Nutella Mug Cake
While am writing the word 'Nutella' itself my mouth is watering, love this spread, though its not recommandable to have this spread often. I bought them rarely that too when i plan to make some crepes at home. Kids just love this spread with crepes, however having this spread once a while will definitely makes you happy. I love mug cakes, they are really very easy to do as these mug cakes goes for microwave cooking. Just with one or two minutes depending upon your microwave oven power you can dish out mug cakes very much quickly. Whenever we feel like having some quick desserts especially a single serving cakes i'll definitely go for mug cakes.

Eggless Mango, Chocolate Chip Mug Cake
If you have a sudden craving or dont have oven at home, am sure your microwave oven will help definitely to satisfy your tastebuds. I have been cooking loads of dishes through microwave oven which gets cook easily with less efforts and sometimes even in less time. Especially mug cakes, they take hardly 2-3minutes depending upon the quantity of the cake batter you have poured in your mug. If you want to make a small size individual cake with less ingredients, microwave cooking will definitely helps you a lot. But i recommand to get silicon moulds if you want to make small sized cakes either for a sudden craving or else for an individual cake. Okra Potato Curry/ Bhindi Aloo Ki Sabzi
Stir fry or curry, however okra aka bhindi and potatoes works wonder together, one of my recent trial with these both vegetables turned out absolutely yummy. This sabzi goes for simple ingredients with few spice powders, and i went for microwave oven cooking for making this fingerlicking curry. Microwave cooking needs patience but you doesnt need to stay next to your oven as we do if you are cooking in stove top. Once the cooking time gets finished,your dishes will be ready to have, actually i love preparing foods through microwave oven, i know some are using their microwave oven just for reheating but trust me you can make varieties of dishes with this kitchen gadget. I have prepared couple of dishes with my microwave oven and still i cook my basmati rice through it,since ever i have started cooking basmati rice through microwave oven i get prefectly cooked basmati rice. You know i can talk for hours about microwave cooking, actually you can prepare a Royal feast with it.

MW Eggless & Butterless Mug Brownie
After two beautiful dishes cooked through microwave oven, i seriously want to finish this week's blogging marathon with a sweet or cake cooked through it. Microwave oven do bake cakes within few minutes and if you are craving for a quick bake,just make a single serving mug cake through microwave oven,am sure that this mug cake will definitely satisfy your sweet tooth. Since am a chocoholic person,i love anything with chocolate and this kind of sudden mug cakes are my all time favourite. Eggless or butterless with chocolate or without chocolate, this mug cake gets ready within a minute.
For my today's post of blogging marathon under the theme Microwave cooking, am sharing this super moist, highly chocolatey,butterless and eggless single serving brownie. MW Podi Idli
My second post for this week's blogging marathon is this Microwave Podi Idli coz my theme for this week is Microwave cooking. Podi idli doesnt need any introduction and South Indians love these tiny steamed rice cakes tossed with spice powder.Mini idlis are my kids favourite dinner, most of the time i'll serve them simply with sambar but they do love mini idlis as podi idlis.Recently i started experimenting with red rice and prepared red rice idly batter few days back.
Obviously i tried this microwave mini idlies with MW idli plate which i bought during my last trip to India.These mini idli plates are seriously very handy and makes ur life easier if you feel like having these tiny idlies.Within a minute, these microwave mini idlies will gets ready and the podi idli preparation take almost less than 2-3minutes. Chinese Veg Spring Rolls with MW Thai Peanut Sauce
August is going to a month of celebration for us, this month is so special for me coz am a august born too. Many of my friends who are very close to my heart celebrates their birthday in august too. One of my food blogger celebrates her birthday today,since i want to celebrate her birthday virtually i cooked an appetizier from her space as we, a group for food bloggers chosed to cook some food for the celebration under the theme potluck party from her space..

Chinese foods are my weakness especially their spring rolls are our family favourite. I can get chinese foods easily as am living in Chinatown and atleast thrice a month i make chinese foods at home.I have made zillions of time these spring rolls at home but i wonder how i forget to post it in my space,its happens na.Doesnt matter,now i had a chance to post it as i picked it from Sangeetha's Space.Spring rolls are usually served for starter here in every chinese restaurants. They can be made very easily and the filling will also go for an easy breezy preparation. Sauteed veggies rolled in a spring roll sheets,once fried in oil makes these crispy beauties.Also am running again the first week of blogging marathon from today and my theme for this week is Microwave cooking, earlier i used my microwave oven just for reheating but after entering to this blogsphere i started experimenting with it and i can cook a feast now with it.
Few days back i made these crispy spring rolls and served with microwave Thai peanut sauce for our snacks.This crispy spring rolls dipped in peanut sauce makes an excellent pair.This microwave peanut sauce goes for an easy breezy preparation and they gets ready within less than 2minutes. You can make this simple and quick mug cake with anything and your cake gets ready easily anytime of the day whenever you feel like having this cake.

4tbsp Wheat flour
4tbsp Sugar
2tbsp Grated carrot
2tbsp Cocao powder
1/2tsp Baking powder
A pinch Baking soda
3tbsp Olive oil
4tbsp Yogurt
Take all the ingredients in a bowl and whisk together as a smooth batter.
Fill half of the coffee mug with this prepared cake batter.
You can prepare two medium sized mug cake with this batter. Cook in high power for 2 minutes.
Take care not to overbake otherwise your cake will turns rubbery.
Enjoy warm.

Microwave Eggless Chocolate Banana Brownies
If you have abundant of ripen bananas and you dont have any idea to finish them,you can prepare quickly and easily this wonderful looking brownies, these brownies will satisfy definitely your sweet tooth and suits prefect for a lazy evening snacks coz this brownies are prepared through microwave oven. As i told in my previous post, this brownies are from PJ's space, this brownies goes for a super quick preparation and both condensed milk,banana puree makes this brownies super moist and ultimately spongy and delicious.
I used silicon mini moulds for making this brownies and also went for oil and chopped walnuts instead of butter and flax seeds PJ used in her brownies. My brownies turned out awesome within 2minutes and they vanished super quickly, my lil one enjoyed having this brownies topped with sugar pearls. 1cup All purpose flour
1/4cup Dark Chocolate powder
1/4cup Oil
1cup Sweetened condensed milk
1/4tsp Baking powder
1no Ripen Banana (grind as puree)
A pinch Salt
2tbsp Walnuts (chopped)
Sieve together the all purpose flour,baking powder, salt and dark chocolate powder.
Whisk together the oil,sweetened condensed milk and banana puree in a bowl, now add the dry ingredients to the wet ingredients, mix with a spatula.
Finally fold in the chopped nuts and pour enough batter to the silicon mould and cook in microwave oven for 2minutes in high temperature.
Enjoy warm drizzled with chocolate sauce or simply with a cup of coffee.

Microwave Apricot Halwa
Every christmas, my neighbour from next door never forget to give us a basket full of dry fruits, every time we finish that whole basket very much quickly especially those fabulous dates from Morocco. But somehow, none at home loved the dry apricots from that basket this time,so i freezed them immediately for further use. When i thought of making halwa with fruits for this week's blogging marathon, immediately those frozen dry apricots came to my mind, i thawed them and soaked them overnite for making halwas the next day through microwave oven.
As am making halwa with apricots for the first time, i dont want to make a huge quantity and went for a trial with a cup of soaked apricots. Oh my god, for my surprise this halwa turned out seriously super delicious,glossy and quite addictive.Whoever told no to those dry apricots, simply relished this irresistible halwa. 1cup Dry apricots (soaked overnite)
3/4cup Sugar
2tbsp Ghee
1tbsp Cardamom powder
2tbsp Dry cucumber seeds or sliced almonds
A pinch Orange food colour
Grind the soaked apricots with sugar as thick paste.Take this thick apricot paste and the food colour in a microwave safe bowl,mix well and cook for 10 minutes in high.
Give a stir every 3 or 5 minutes, add the ghee, nuts and cook in high again for 5 minutes..finally add the cardamom powder and stir again..
A glossy apricot halwa is ready. Enjoy warm or chilled.

Microwave Nutella Mug Cake
I wanted to post this easy breezy mug cake since a long, i'll make them quite often whenever my teddies ask me to make some cake,but somehow i couldnt post them in my space.This time without any fail,i clicked a picture of this yummy and highly addictive cake. Eventhough my favourite is peanut butter chocolate mug cake, this nutella cake is always a winner and everyone at home just love it.
Very soon, i'll post an eggless version of this cake, stay tuned friends. Yep i prepared an eggless mug cake today and we enjoyed thoroughly.Coming to this droolworthy nutella mug cake, this cake goes for quick preparation and mine is ready within 1m 30 seconds,yes it takes less than 2minutes to get ready. Vegetable Omelette~~Microwave Version
If you are having hard time in making omelette through stove top, give a try to this quick,almost oil-less omelette with loads of veggies.Whenever we feel like having a simple and quick dinner, we will definitely go for sandwiches with grilled meats,grilled veggies or either omelette with veggies.If i feel lazy to prepare omelettes through stove top, i'll make omelettes through microwave oven and serve them with bread toasts either for breakfast or for dinner.
This single serving omelette will go for easy breezy preparation and they will get ready within 3 minutes if they are cooked in high power in microwave oven. You can use any sort of veggies for making this omelette,i prepared this wonderful looking omelette just before an hour for our dinner. 1tbsp Carrot (grated)
1no Egg
2tbsp Zucchini (grated)
Few french beans (chopped)
Pepper powder
Few curry leaves
Salt
Take the veggies, egg and pepper powder in a bowl,add enough salt and give a quick stir..brush a bowl with enough oil, pour the egg-veggies mixture and cook in high power for 3minutes (pls note that the cooking time may varies according to your microwave oven )
Remove the cooked omelette and serve with bread toasts.
This single serving omelette will go for easy breezy preparation and they will get ready within 3 minutes if they are cooked in high power in microwave oven. You can use any sort of veggies for making this omelette,i prepared this wonderful looking omelette just before an hour for our dinner. Lasuni Aloo~~Microwave Version
I can say that i cant live without garlic and onions,obviously i do add onions and garlic cloves almost in my everday cooking. We love garlic flavoured stir fries especially potatoes with garlic. I cooked up some super delicious,flavourful garlic flavoured spicy potatoes known as Lasuni aloo for our today's lunch through microwave oven. This yummy stir fry goes for an easy breezy preparation and tastes absolutely tremendous when served along with rice or rotis.I loved this lasuni aloo along with rasam rice,both together tastes absolutely divine.Sending to MEC guest hosted by me,event by Srivalli & to Amina's Guest Quest. .
4nos Potatoes
1tsp Red chilly powder
6nos Garlic cloves (crushed)
1/2tsp Cumin seeds
Few curryleaves
1tsp Chaat masala or amchur powder
Salt
Oil
Wash thoroughly the potatoes and cut them as medium cubes, put them in ziplock bags, makes small holes on the ziplock bags or punch them with sharp knife, cook in microwave oven for 5 minutes in high power,remove the skin from the potatoes.
.Add the chaat masala, red chilly powder and salt to the cooked potatoes and toss gently until all these spices get well mixed.
Heat enough oil in a microwave safe bowl, add the cumin seeds,crushed garlic cloves and curry leaves and cook in high for 2minutes, now add the spiced potato cubes and cook in high for 5-6minutes(stir twice in between) until the oil gets separates from the potato masala..
Serve hot with rice! enjoy...

Pan Fried Peanut & Paneer Stuffed Bread Pakoras
Sometimes i had to break my head to finish up leftover slices of stale breads, we usually have for breakfast.Seriously i got bored of using those bread slices for making vadas or cutlets, after trying out Bread pakoras for bloghop wednesdays i can feed easily everyone at home those stale bread slices as this kind of no fry bread pakoras.
This time for a change i prepared a simple,quick and nutty filling with grated paneer, coarsely grounded roasted peanuts spiced with chilly powder, kasuri methi,cumin powder and salt. You doesnt need to cook this filling and you can use it directly as stuffing in your bread pakoras. We just loved this yummy pakoras and its our recent family favourite. Serve this pan fried bread pakoras with a cup of tea or coffee anytime of the day, am damn sure you will definitely have a super satisfying,delicious and definitely a guilt free snacks. For filling:
1/2cup Paneer (grated)
1/4cup Roasted peanuts
1/2tsp Roasted cumin powder
1/4tsp Red chilly powder
Salt
1/2tsp Kasuri methi leaves(crushed)
Take grated paneer,coarsely grounded peanuts, cumin powder chilly powder, salt and kasuri methi leaves in a bowl, mix everything well and keep aside.
For Pakoras:
4nos Wheat Bread slices
1/2cup Chickpeas/Besan flour
1/2tsp Red chilly powder
Salt
2tbsp Yogurt
Water
3tbsp Oil
Take the besan flour red chilly powder, salt,yogurt in a bowl,add gradually the water to turn as a mildly thick paste..
Cut the bread slices diagonally and spread already prepared paneer-peanut filling and close it with an another bread slice.
Meanwhile heat enough oil in a tawa,dip this stuffed bread slices to the prepared paste and drop gently to the hot tawa..fry on both sides until they turns golden brown..
Enjoy warm with ketchup or with the chutney of your choice.

MW Beets,Apple & Oats Halwa
Have you ever combined beets,apples and oats together for making halwa?? if not do give a try friends, personally i never thought that this fabulous combination works out wonder, for my surprise even my lil one enjoyed thoroughly having this catchy,healthy and delicious halwa for his dessert after the lunch...This time i prepared this halwa through microwave oven and completely skipped the stove top..Personally i felt that making halwas or pedas through microwave oven was
quite easy and quick also you wont waste your precious time on stirring or sauting continously as we do while cooking them on

2nos Red apples
1no Beetroot
1/2cup Rolled Oats
2tbsp Milk powder
1/2cup Sugar
1tsp Cardamom powder
2tbsp Ghee
Few melon seeds
Peel the apples and beetroot, grate them finely..Take the sugar,milk powder, grated apples and beets in a microwave safe bowl..cook in microwave oven for 20minutes in high power (stir twice in between)..Take the oats in an another microwave safe bowl,cook in high power for 2minutes until they turns bit crispy..Now add the rolled oats,cardamom powder,ghee to the almost cooked halwa and cook again for 10minutes until the ghee get separates (stir in between)..
Enjoy warm topped with few melon seeds or sliced nuts....

MW Mushroom & Oats Soup
Soups are always welcome that too for dinner if the weather is too
chilled and rainy..If you want to get a super comforting, yummy and healthy soup, give a try to this tempting soup..Serve this bowl of soup with some toasted bread slices am sure you will definitely have a super satisfying dinner..I simply prepared this thick and healthy soup through microwave oven just with frozen mushrooms and rolled oats..We enjoyed having this soup which suits incredibly prefect for rainy
evenings and we loved it, this soup

2cups Frozen mushrooms
1/4cup Rolled oats
1no Onion (chopped)
Olive Oil
Salt
Pepper powder
2tbsp Low fat cream
Take the olive oil in a microwave safe bowl,add the chopped onions and cook in high power for a minute,now add the frozen mushrooms,salt and pepper powder and cook for 3minutes in high power, add 2cups of water,low fat cream and cook everything for 5 minutes in high power..Add immediately the rolled oats to the cooked veggies,give a quick stir..
Blend the soup with a hand blender..Serve hot with cream and few dry herbs..
