Shrimp Pomadora Pasta

Ingredients:
1/2 Cup Balsamic Vinaigrette Dressing
1 onion, finely chopped
2 cloves garlic minced
1 Can diced tomatoes
2 Cups Penne Pasta, uncooked
1 Lb. cooked, cleaned shrimp
1/4 Cup Grated parmesan cheese

Directions:

Heat large nonstick skillet on medium-high heat. Add dressing, onions and garlic; cook 2 minutes. Stir in tomatoes; cook 12 minutes, stirring occasionally. Meanwhile, cook pasta as directed on package.

Add shrimp to sauce; cook 2 minutes or until heated through.

Drain pasta; toss with shrimp mixture. Sprinkle with cheese.

I would saute my onions longer because they were still a little crunchy, but other than that, this recipe is DELICIOUS!!!!!!

Fried Rice

This recipe is from my Mother in Law. She really is a great cook! And this recipe is delicious. I am sure this isn't authentic, although my hubby lived in the Phillipines for a while when he was a kid.

Ingredients:
1 Lb Shrimp
6 C Cooked Rice
1 Pkg Bacon
1 Onion Finely chopped
1/2 C Carrots Diced
1/2 C Celery Diced

Directions:

Fry bacon until crisp, remove from pan. Add Carrots, Onion, and Celery to bacon grease and cook until onions are clear. Add Shrimp, cook for approx. 5 minutes. Chop bacon and add when shrimp is pink and done. Add rice stir to mix. Eat up, it is delicious!

This is easier than I thought. You can also add a scrambled egg if you want. And probably some sweet peas. Hubby just doesn't like those items, so he skips them.
