Liver fry
This is husband recipe he adapted from m-law. When she was with us i never cared to know how she made this because i never ate it. Husband and kids used to eat it. The greens which she used in this recipe is alien to me. I heard that it is used in Arabic cuisine and m-law uses it only in liver fry, reason not known to me. This liver fry has been cooked by husband and first time i tasted it. The taste was too good and kids too liked it a lot. I used chicken liver but back home m-law uses mutton liver. Here goes the recipe:-
Ingredients:-
Chicken Liver 1 pound
Dill leaves or sogi kura few strands
Onions 1 chopped
Cinnamon 1inch pc
Green chillies 2 chopped
Ginger garlic paste 1 tsp
Turmeric powder a pinch
Coriander powder 1 tsp
Red chilly powder 1 tsp
Salt to taste
Oil 3 tbsp
Method:-
Marinate Liver with ginger garlic paste,turmeric powder and salt. Keep it for half an hour.
Heat oil, when hot add cinnamon stick.Then add onions and green chillies. Once they are fried add dill leaves.
Saute for 2-3 minutes. Add red chilly powder,coriander powder and turmeric powder.
Again saute for 2 minutes. Add chicken liver. Mix well and cover the pan. Let the liver cooks in its own water.
It make take about 10 minutes for liver to cook. Once all the water is evaporated and liver changes its colour to dark brown it means its almost done.
Fry for another 2 minutes so the liver cooks 100 %.
Serve as a side dish or as a starter as in my house. It was done before i served lunch.

Chicken Tikka
My blog has many non-veg dish, we family are meat lovers. Trying hard to reduce eating meat. We have considerably reduce eating mutton/lamb. It's mostly chicken we eat that too twice a week, Saturday and Sunday. Daughter asked me make this tikka. We used to eat very tasty Chicken tikka at a restaurant in Dubai. I used my own masala for marination and grilled it. Here is the recipe.
Ingredients:-
Boneless chicken pieces 10
Food colour few drops
Thick curd 1 /2 cup
Salt to taste
Oil 3 tbps
Garlic paste 2 tbps
Garam masala powder 1/2 tsp
Red chilly powder 1/4 tsp
Coriander powder 1/2 tsp
Onions big square pcs
Method:-
Mix curd with other ingredients. Add chicken pieces. Let the marinate rest for 4-5 hours.
Soak the barbecue sticks in water for 1 hour.
String the chicken pieces and onion pieces alternatively.
On a baking tray spray oil.
Place the tikkas with enough space between each stick.
Grill for 15 minutes on both the sides.
Serve hot with salad.

Chicken fry with Poppy seeds
This fry is some what different from chicken fry i have in my blog. This chicken has a different taste as poppy seeds are added to the fry at the end. Usually poppy seeds are grounded to fine paste and added to the curries or fries and are cooked along with the chicken/mutton or veggies. But in this poppy seeds are added later. Here is the recipe:-
Ingredients:
Chicken 1 pound
Ginger garlic paste 2 tbsp
Red chilly powder 1 tbsp
Turmeric powder 1/2 tsp
Salt as per taste
Oil 2 tbsp
Curd 1 cup
Chopper coriander 1/4 cup
Marinate all of the above ingredients for 10-15 minutes.
Take a cooker add 2 tbsp of oil. When hot add chicken and water. Mix well and pressure cook for 2 whistles.
Now for fry.
Cinnamon 1
Cloves 3
Shahi zeera 1 tsp
Zeera 1/2 tsp
Onions 1
Ginger garlic paste 1tsp
Turmeric 1/4 tsp
Garam masala powder 1 tbsp
Take a kadai. Add 2 tbsp of oil. Once hot add cinnamon,cloves,shahi zeera and zeera for a while. Add onions and saute until the onions are light brown in colour.
Add water from the chicken. Cook until the water thickens into gravy.Now add garam masala powder and then add chicken. Fry until all the gravy evaporates. Now add 1 tsp coconut powder , poppy seeds 1 tbsp and chopped coriander leaves 1/2 cup.Saute for another 2 minutes and lastly add 1 tbsp of lemon juice.
Serve hot with roti or hot rice.

Boiled Anda Burji/ Boiled Egg Scramble
It's been two months i started working here, life has been hectic and i am loving this.... I have don't have time for shopping groceries and veggies eggs come to my rescue. One such recipe is the one below which is easy to make and filling too.
Ingredients:-
Boiled eggs 6
Onions 2
Green chillies 2
Curry leaves few
Saunf 1/2 tsp
Rai/ mustard seeds few
Udad dal few
Turmeric powder 1/2 tsp
Red chilly powder 1/2 tsp
Oil 2 tbsp
Salt to taste
Method:
Cut each egg into 8 pieces.
Take oil in a pan. When hot add rai and udad dal. Add curry leaves. When rai splutter add saunf,onions and green chillies.
Fry till onion change colour. Don't fry onion much. Add turmeric powder and salt.
Then lastly add boiled eggs. Mix very carefully so that eggs don't break. Sprinkle red chilly powder and mix carefully. Serve hot.
Serve as a side dish with hot rotis. But sometimes we eat it as snacks. By the time i serve lunch or dinner this curry is half eaten.

Andhra Prawn Fry
We have been told by doctors that prawns are very high in cholesterol.We avoid eating prawns and they are quite costly too but very tasty.My daughters love prawns and when ever we go to restaurants we order for loose prawns.At my mothers place i used to eat a lot but after getting married i hardly cooked prawns.In last ten years i cooked prawns 10-11 times.
Ingredients:-
Prawns 500gm/1/2kg
Cinnamon 1''pc
Cloves 1
Onions cut into length wise 1
Green chillies slited 2
Curry leaves few
Ginger garlic paste 1 tbsp
Turmeric powder 1/4 tsp
Chilly powder 1/4 tsp
Coriander powder 1/4 tbsp
Garam masala powder 1/4tsp
Salt to taste
Oil 3 tbsp
Method:-
Wash prawns thoroughly and de-vein the prawns.
Boil prawns with little salt for 3-4 minutes.Drain water and keep the prawns aside.
Heat oil in a kadai,add cinnamon,cloves,curry leaves,onions and green chillies.Saute until onions change colour.
Now add ginger garlic paste and saute till the curry changes into brown colour.Now add prawns, salt, turmeric powder and coriander powder.
Saute for a while maybe for 5-6 minutes until the prawns are dry.
Lastly add red chilly powder and garam masala powder.
Serve hot as side dish or as party snacks.

Capsicum Egg
I have bookmakered this recipe in 2009 and it took almost 2 years to make it.This somehow slipped from my mind that i have to taste this combination of egg with capsicum.Few days back i was browsing my book marks and found this one.This i bookmarked from Simply Sindhi blog.This blog has wonderful sindhi authentic recipes.
Ingredients:-
Capsicum 5
Onion 1 chopped
Green chilies 2 chopped
Tomatoes 1 chopped
Eggs 2
Turmeric powder 1tsp
Coriander powder 1tbsp
Pepper powder 1tsp
Red chilly powder 1tsp
Oil 2 tbsp
Cumin seeds 1/2 tsp
Milk 1/4th cup
Salt to taste
Method:-
Take oil in a pan.When hot add cumin seeds.When they change colour add onions and green chillies.
Saute until onions are pink in colour.
Add tomatoes,capsicum and salt.Cover and cook till capsicum are soft.
Then add coriander powder and turmeric powder.
Saute again for a minute.
Now break eggs in the center and leave it for a minute.
Then add milk and mix the curry.
The egg will get cooked in 2-3 minutes.
Lastly add pepper powder and mix well.
Serve hot as a side dish with rice or with roti.

Onion Chicken
Onion chicken i first ate at Urvasi restaurant near my place.Made a attempt at home but was no where close to what i ate at Urvasi.But the taste was quite different and it was super hence a post on that.Or else it would have been another flop which i don't blog and prefers to forget.Here is the recipe
Ingredients:-
Chicken 250 gms
Ginger and garlic paste 1 tbsp
Turmeric powder 1/2 tsp
Salt as per taste
Curry leaves few
Mix all the above and let it marinate for 1 hour.
Onions 3 chopped into big pieces.Just chop one onion into four pieces.
Oil 3-4 tbsp
Green chillies 4-5 (can be reduced)
Garlic 6-7 chopped finely
Garam masala powder 1 tbsp
Method:-
Heat oil.Add garlic and green chillies and saute till they both change colour and leaves a nice aroma.
Now add the marinated chicken.Cover and cook until chicken is tender enough (almost cooked)
At this time add the chopped onions and stir fry for few minutes and avoid mashing onions.Onion taste quite good when fried this way.Sprinkle garam masala powder now.
Fry till the chicken pieces are dry and a layer starts coming on the chicken,i meant the red/brown layer.
Serve hot as a side dish to biryani or plain rice and dal.

Kheema balls fry
Kheema balls fry is quite easy to make and goes very well as snacks along with drinks or just evening snacks.I made this to eat along with pachi pulusu and rice.Here goes the recipe
Mutton kheema 1/2 kg
Ginger and garlic paste 1 tbsp
Clove 1
Cinnamon 1/2' pc
Khus khus 1/4 tsp
Green chillies 2
Salt to taste
Oil for deep frying
Method:-
Wash kheema and drain all the water.
Add all the ingredients and make it into fine paste.
Apply oil to your palm and make small balls and deep fry them in batches.
PS:-If the paste is runny just add roasted channa dal powder (putnalu podi)
That's all isn't it easy :D

Chicken Sausages fitters/bajjis
It been a while i updated my blog.Firstly it was my laptop which had some issues and was preventing me to open few websites including blogger and youtube.Was busy with house work and was able to allocate some time for myself.Was going to gym and some diet plans which worked for me.Able to reduce 5 kgs in 3 months not bad though.
Not much cooking too as i was no diet.Morning and night it was oats and lunch it was just fulka and vegetable curry.Was cooking for the kids but nothing new or special just the routine cooking.The other day kids were asking me amma why you are not making anything special,its been long you made anything.
I regularly buy chicken sausages and i usually fry or use them in semiya upma.I was thinking to make something new with them and then the idea of making sausages bajji struck me.And it was a awesome hit.
The recipe is just simple like another other fitters/bajji's.
Ingredients :-

Besan/Gram flour/Sanagapindi 1 cup
Rice flour 2 tbsp
Ajwain 1 tsp
Cooking soda a pinch
Salt as per taste
Red chilly powder 1 tsp
Water for making the batter
Oil for deep frying
Method:-
Make a thick batter of besan,rice flour,ajwain,cooking soda,salt and red chilly powder.
Cut sausages into your desired sizes
Dip each piece in the batter and deep fry in batches.
Take them on a absorbent paper and serve hot.

Garlic Chicken Fry
Ingredients:-
Chicken boneless 250gmsGarlic 10 pcsCurry leaves fewRed chillies whole 5Salt to tasteTurmeric powder 1tspOil 2 tbspCashewnuts 10pcs
Method:-
Grind red chillies and garlic into fine paste.Marinate chicken with the above paste,turmeric powder and salt.Leave it for 1 hour.Take oil in a non stick pan,when hot add cashewnuts and curry leaves.Stir for 2 minutes.Then add chicken.Stir on high flame for a about 2 minutes.Cover the pan and let the chicken become soft.Fry till dry.

Simple Mutton Fry
Usually after heavy meals on fridays we end up eating rice and rasam on saturdays.And this fry is the excellent as a side dish.I love to make this as it calls for very less ingredients.
Ingredients:-
Lamb mutton 250gms
Pepper powder 1 tbsp
Lemon juice 1 tbsp
Salt as per taste
Curry leaves few
Oil 2 tbsp
Method:-
Marinate mutton pcs with salt and lime juice for 1/2 hour.
Heat oil,add curry leaves.When leaves change colour add mutton pcs.
Cover and cook for few minutes.If required sprinkle little water.Cook till the mutton pcs are cooked and soft.
When all the water dries,then saute the pcs until cripsy and lastly add pepper powder and serve.
The time taken for the mutton to cook depends on the mutton,the mutton which i get from india cooks faster than the local mutton here.I always see that i use mutton which comes from India.

Lamb brain fry/Bheja fry

Ingredients:-
Lamb brain - 1
Ginger garlic paste 1 tbsp
Curry leaves few
Turmeric powder 1/2 tsp
Salt as per taste
Oil 3 tbsp
Red chilly powder 1 tsp
Soak lamb brain in warm water for 10 minutes.
Slowly remove the top layer and wash throughly.
Heat oil in pan,add curry leaves.
Add ginger garlic paste and saute till the raw smell goes off.
Then add salt and turmeric powder and saute well.
Cover and cook for 5-6 minutes,if required sprinkle 2-3 tbsp of water.
Lastly add red chilly powder,mix well.
This dish resembles like egg bhurji.
