Egg Roast

For entire week i eat only phulkas for lunch and no rice. Only on Saturday and Sunday i eat rice. And Saturday its always rasam, rice and papad/eggs. I am not that big fan of eggs but eggs always comes as handy when you dont have any veggies or non-veg at home. I have few egg recipes on my blog and this fry goes very well with rice as a side dish. Here is the recipe:-


Ingredients:-

Eggs boiled 4
Onions 2 sliced
Green chilies 3 silted
Ginger small pc sliced
Garlic 2 sliced
Tomato chopped 1
Rai 1 tsp
Curry leaves few
Turmeric powder a pinch
Salt to taste
Red chilly powder 1 tsp
Coriender powder 1tsp
Garam masala powder 1 tsp
Sauf powder half tsp
Oil 3 tbsp



Method:-

Make small slits on the eggs.

Take oil in a pan. When hot add rai and curry leaves. Add ginger and garlic slices.

Then add chopped onions and sprinkle salt. Saute until onions are light brown colour.

Then add green chillies and turmeric powder. Saute for a while.

Add coriander powder,red chilly powder,sauf powder and garam masala powder.

Then add tomatoes.Fry for 3-4 minutes.

Then add eggs and mix well.

I served the egg roast with rice and hot rasam....

Avial

I ate avial only once in a kerala restuarant on a onam day where they served onam sadya.I thought it involves lot of work to make this curry.Deeps my friend who blogs at perceptions shared her recipe which is quite easy to make and very tasty as well.Thanks deeps for the wonderful recipe.Here goes her recipe

Ingredients:-

Carrot 1
Beans few
Drum stick 1
Yam  few pcs of 1'' size
Potatoes 1
Capsicum 1
Raw banana 1/2 pc
Oil for seasoning 1 tbsp
Curry leaves few

Make a paste of the below ingredients:-

Fresh coconut 1 cup
Curd 1/2 cup
Green chillies 4-5

Method:-

Chop all the veggies into long equal size pcs.

Boil the veggies until done but not so soft.

Add the grounded coconut mixture into the veggies.

Mix gently.Add salt.

Boil for few more minutes until your kitchen is filled with the nice aroma of coconut.

I did a mistake of adding more water and avial was watery.I had to boil for longer time so that the curry thickens.So avoid adding water.

Surprisingly my mom liked this curry,she is very choosy  and she prefers her cooking than my cooking.
