Pancake With Fruit Salad


Ingredients :
For the pancake.
1/2 cup flour
1/2 teaspoons baking powder
1/4 teaspoon salt
2 tbsp sugar
3/4 cup milk
1 egg
Oil for cooking

For the fruit salad.
1 Apple
1 Oranges
1/4 cup grapes
1 Bananas
4 tsp chopped Mango
2 spoon sugar
1 cup Ice cream of your choice

1.First prepare the pancake.Combine all ingredients and beat untill well mix.
2.Place a non stick pan and pour a bit oil and spoon about one ladle batter onto a hot nonstick griddle.
3.Turn pancake when the upper part is cooked.Like this prepare all the pancakes and set aside and let it cool down.
4.Now prepare the fruit salad.Cut all the fruits into small peices by removing their covers, seeds etc.Add sugar to it .
5.Add ice cream and mix well.
6.Now spoon some fruit salad upon each pan cake and serve.

Jelly Fruit Salad

Ingredients
1 Apple
1 Oranges
1/4 cup grapes
1 Bananas
5-6 Strawberries
Cashunets and rasins for garnishing
1/2 packets of Jelly Mix
2 spoon sugar

Method
1.Boil 2 glass of water and mix it with the jelly mix.Set the jelly in the mould and refrigerate for 4-6 houres keep aside.
2.Cut all the fruits into small peices by removing their covers, seeds etc.Add sugar to it ..
3.While serving add a layer of fruits in a bowl
4.Cut jelly into cubes and add a layer of jelly pieces on top of fruits
5.Top of it add a scoop of Strawberrie or your choice of ice-cream.
6.Now garnish with cashwnut and rasins.

Pazham Kozhakatta / Sweet Banana Rice dumplings

Kozhakatta is my hubbies favourite.I usually make them using coconut and jaggery.So i though why dont make a change in the filling.I found two plantains,it was almost nicely rip.I dont know whether any of my blogger friends have tried this.Now let me say about the Pazham Kozhakatta,it was a great hit at my home.Any way my experiment has successed.
You friends try it out.You will realy like it.Iam guaranty.It is very simple.For making sweet kozhakatta it takes time.But this dont take that much time...

Ingredients:
Rice Flour - 1 cups
Water - 1 cups
For Filling:
Banana -2 finaly chopped
Coconut (grated) - 1/4 cup
Cardamom - 3/4 teaspoon
Sugar-2-3 tsp (U can add more)
ghee – 1 teaspoon


Method:
1.Heat a non stick pan and add gee,now add banana and cooked for 4-6 minutes.
2.When it change to nice yellow colour add grated coconut and sugar.
3.Mix well nicely,add cardamom powder and remove from fire.Note that it should be dry.No water containt should be there.Divide this into 10 parts.

To make the rice dough:
4.Boil water. Add the boiling water part by part into the rice flour and mix well with a ladle until you get a soft yet firm dough. Ensure that there are no lumps in the dough. use some oil in your hand inorder not to stick.
5.Divide this into 10 parts.Take a rice dough (medium lemon sized) into your palm. Make a small ball of the dough and flatten them into small cups using your thumbs.

6.Take one part of the coconut banana filling and place it in the middle of the flattened dough.
7.Cover the sides while ensuring the filling is safely cocooned with the soft rice dough covering the filling from all sides.Repeat to make more.
8.Place the dumplings in the steamer and steam for 10-15 mins. Take out and serve.

Mango Juice


It is very very hot here in U.A.E.So i always some thing cold to drink.And this juice is for divya vikrams show me your smoothies.

Ingrediants:
Mango -1
Sugar -2-3 tsp
Ice cubes -4 cubes
Milk -1 glass
Water -1-2 glass
1.Peel and chop ripe mango into pieces
2.Place in blender with crushed ice, water,milk and sugar. Blend to a smooth consistency.
Pour into glasses and serve.

Cucumber Grape Raita

Ingredients;
2 cucumber sliced into small pieces
6 Green grape sliced into half
Salt to taste
1/2 cup of yogurt
1green chillies
2tsp of chopped coriander


Method:
Take a bowel and mix all together and add salt to taste.Now garnish with coriander leaves.

Banana Egg Balls

Ingredients :

Big Bananas (not fully ripe) -3no's
Egg-3 no's
Sugar -3 tbs
Powdered Cardamom-3 no's
Sliced Cashew nuts-6 no's
Ghee-1 tsp
Oil-for frying

Method of Preparation :

1.Steam the bananas well. Peel the skin and grind it in a mixer.
2.Mix the eggs with cardamom powder, cashew nuts and half the quantity of sugar. Heat ghee in a pan and fry the egg mixture. Add the remaining sugar to it.
3.Make small balls of the banana mixture. Apply some oil in the hands and spread the banana balls with the fingers. Place one spoon of the fried egg mixture in it. Seal the edges and make oval shapes. Deep fry in oil.

Corn flakes fruit salads

Ingredients:
1 cup of mixed fruits of your choice
1 cup of strawberry ice cream
1/2 cup of Corn flakes
Suger if needed
Directions:
1.Cut fruit and mix in large bowl.Mix some sugar.
2.Now mix ice cream and corn flakes.
Note:Its should be used as soon as made,other wise the crispiness of the corn flakes will be lost.

Nendra Pazham Mutta Appam

This is also a popular snack item in Malabar area.this can be find in ramzan time in muslims homes.I have tasted this for the first time from my hubby’s friends home on our reture from our last vaccation..His home is just near to the air port.So he asked us to visit his home..I was realy surprised to see many snacks.All most all types of the Malabar snakes.So I thank them for sharing this tasty recipe with me.

Ingredients:

Ripe plantains - 2
Eggs - 4
Sugar - 8 tbs (or as per your taste preference)
Cardamom powder - 3/4 tsp
Ghee - 2 tbsp
cashew nuts - 8 no.s (optional)
Raisins - 1 tbs (optional)

Preparation :

1.Cut the plantain into two(lengthwise) then cut again into further halves.slice it into medium thin slice.The slices should not be too thin or too thick.
2.Place a non stick pan on the stove and add ghee.If adding cashew nuts and raisins fry them and keep aside.
3.Now add plantains and sauté it until cooked or when it changes it colour.
4.Take a bowel and break eggs,and sugar and cardamom powder and beat it for 4-5 minutes.
5.Now add the cooked plantains to the egg batter and stir well.Pour this to the non stick pan,cover the lid and cook it in very low flame.cook untile the top part is done.Or u can place to the pre heated oven of 150 degree,for about 10 minutes.Or untile the top part is cooked.
6.Transfer this to a plate and cut into any shape of your choice.
