Hello everyone, I told you all back at the end of 2012 that I wanted to vlog lol.

And one of the first vlogs I wanted to do was the husband tag! Me and husband finally did it last week! It was fun lol! Reminiscing and wondering, if he knows me. He kinda does as you may see! LOL.  If you want to do it, too, the questions are below.

Crab Stock and He Said Yes!

Happy 2011!!! Hope everyone rang/is ringing the New Year in with a bang! Here in Germany you don't have much choice. The fireworks starts going off at least a week prior. It's nice, but I have 3 sleeping babies! Or babies who SHOULD be asleep.

Me? Found out my kitchen sink has a leak. So besides that, I am happy to see another year and to have a lovely healthy family.

I proposed to my husband (well I did last month)! We've only been married for 3 years and together for 4 years, but our union was not romantic one bit. We were just trying to get the paperwork done and be together which all should matter in the end. I literally went to the Justice of Peace, said my vows, ate a Doner Kebap then went back to work not the sexy work, but work work. Not so romantic, so I want a nice party. Not a big party, but a little party with us and a couple friends. I want to make the cake and the food and even have my hand at the designs with the help my good friend Becca.

 I am SOOOO nervous, but I am going to do it.....by November. Now that I've posted this on my blog, it better happen! Shit! What inspired this was the amazing wedding/post wedding blogs I follow. Their wedding days looks so amazing and I felt guilty that I don't celebrate love. We don't even have a photo from the day we got married. We're too laid back and I want to change that. Not in an extreme way, but instead of babysitting friends children on my anniversary, I will have others babysit my little ones so I can spend quality time with my amazing  husband.

So to do that I have to tap deeper into my creative side. I've been inspired by the craft blogs I read, I started with my New Year's Day table. Probably not AMAZING. But  it was cheap. Most of the decor came from the 1 Euro store!!! The wreath in the middle was 1 euro cent!

I am starting small. I am not a resolution kind of girl.  Last year my New Year's resolution was "not to get pregnant". My husband had a vasectomy a few months prior so...yeah I better not have gotten pregnant for many reasons!


Another way I am challenging myself this year is of course in the kitchen. Looking to blow your minds with delicious recipes that's range from easy to "DAMN I'm good" challenging. So be ready :)


If you ever make a seafood stew or creamy sauce using homemade stock will make it amazing. I've made chicken and turkey stock, but not seafood. And it's difficult to find here in Germany (even at the commissary). Besides, homemade stock is far more amazing than store-bought anyway!


 For my New Year's Day Menu, I am making a dish featuring crab meat and I be damned if I use the canned crab. So instead I used frozen crab legs which I boiled, cooled, removed meat and saved the shells. Instead of throwing away those shells, I had just enough to make stock!


Awesome foodie Salty Seattle suggested over twitter that I add mirin or fish sauce to flavor the broth. I used fish sauce. This broth is rich, flavor, delectably fragrant and I am excited to put use to this amazing stock!

Crab Stock
Adapted from epicurious.com
2 pounds picked-over crab shells (cracked or chopped) and /or crab bodies (cut into 1-inch pieces, carapace discarded; see Cook’s Notes), crab tomalley, and, if necessary, shrimp shells or lobster carcasses  2 quarts water
1 medium to large onion, coarsely chopped
1 to 2 stalks celery, coarsely chopped
1 1/2 cups chopped tomatoes (tomato "guts" or canned or fresh)
2 cloves garlic, crushed
2 dried bay leaves
2 teaspoons black peppercorns
4 sprigs fresh thyme
Splash of mirin or fish sauce
Kosher or sea salt

Directions

1. Place the crab bodies, shells, and tomalley (and optional shrimp shells or lobster carcasses) in a 6- to 8-quart stockpot and cover with the water. Bring to a boil, skimming the white foam from the surface of the stock. (Using a ladle and a circular motion, push the foam from the center to the outside of the pot, where it is easy to remove.) Reduce the heat so the stock cooks at a fast, steady simmer.

2. Add the onion, celery, tomatoes, garlic, bay leaves, peppercorns, and thyme, and let the stock simmer and cook down for about 1 hour. The liquid should just cover the crab shells as the stock cooks; if it doesn’t, just add a little water.
3. Season the stock lightly with salt, mirin/fish stock. Taste for a rich flavor; if it seems light, simmer for about 20 minutes longer.

4. Strain the stock through a fine-mesh strainer. If you are not going to be using it within the hour, chill it as quickly as possible. Cover the broth after it has completely cooled and keep refrigerated for up to 3 days, or freeze for up to 2 months.

My First Date in THREE YEARS!

My good friend offered to babysit my three children on Saturday. I was so happy because my children love her and she has a HUGE backyard where they can play like the crazy babies they are! Before we left, our youngest, who is 1, gave both my husband and I a hug. He KNEW we were leaving him, it was so sweet. I was thisclose to bringing him, but my husband I really needed this time alone.

Bad part is that I didn't properly plan anything, because my excitement for things such as this usually mean an automatic jinx. I only got excited after we dropped the kids off with her. Then I realized....what the hell are we going to do? We don't go anywhere around town without the kids. We usually go separately while the other watches the kids. I am spontaneous, so we eventually worked it out. All that mattered was that we were together. Cheesy Alert!

We walked down the Hauptstrasse holding hands. We NEVER hold hands while we're out because we're always holding a child, pushing a stroller, running after someone. It was also nice to "catch-up", eat alone, eat ice cream without sharing haha, people watch and just be together. It's been three years since we were able to go out alone and although it was only a couple hours, we cherished every second!

It was a great time and we promised to do it again at least once a month. The hardest part of living overseas is not having family around. I know if I were stateside, my parents or other family would happily watch our children. I was just not comfortable leaving my kids with anyone. When I was a single mother I knew a lot of people who babysat and I had my own personal sitter who would watch my son anytime I asked. But since having my daughter, I've never been comfortable, and after my baby was born, I gave up on the prospect of having a sitter until we moved/visited home. First of all I have three little people, and I worried that anyone else would not be able to handle them. Just reading and watching videos about abusive sitters and nannies prolonged my search. Luckily my friend is a mother of 4 and my children adore her and children. She's like a sister to me and I am so happy to know her. We also have another nanny for late nights. I am so happy. And once a month quality with the hubby will do so much for our marriage.

Because I'm worth it!

Ladies, we all can get comfortable in a relationship. I know guys do as well, but I'm talking to the ladies.

In the beginning, you dress to the nines all the time. Always made sure you wore your best lingerie and of course you wore sets. Hair was always done, toes and nails were perfect, etcetera etcetera. Let's just say you never walked around your mate looking a hot mess for a looong while.

So now fast-forward later on in the relationship. He's heard you fart, saw you pick your nose and teeth, saw you first thing in the morning and has caught a whiff of your morning breath a few times. So now you're wearing sweats even when you're not out for a jog, you have hair curlers in your hair for days, basically not the woman you once were.

Ok, maybe that's just me. My husband claims to love me anyway, and find me sexually attractive all the time. But I know he wished I tried a little harder. My over comfortability (whoa, that's a word!) made me, not him feel very uncomfortable with my appearance. As I said in the previous post, I was more concerned with my kitchen than myself. So what's the point of complaining if you're not going to do something about it. So I did.

Recently we got some extra money, and I asked if there was room in the budget for Mommy Time. He said go for it, which I believe in man-language means, " Please do you'll stop complaining to me!"

I didn't do some massive makeover. I just got my hair done--for the first time in YEARS-- and some new clothes. I also got my eyebrows threaded for the first time. Whoever said threading wasn't painful is a LIAR. OMG I was praying for the end. I hope it lasts!!! I'd rather deal with the quick sting of waxing!!!! But if it lasts, I'll endure the pain of threading!

Honestly, I would never buy this normally...or have my hair this color. So that's why I did it :)


I doubt I will be able to keep it up. We'll see...
