1 32 oz. package frozen hashbrowns
2 can Cream of Chicken soup
2 cups sour cream
1 cup cheddar cheese
Mix all ingredients and pour in a greased 9x13 dish. Bake at 350 degrees for 45-50 minutes. You can also let the casserole defrost for an hour or two before baking and decrease the baking time to 30-40 minutes.

Tater-Tot Casserole
I kind of made this up playing off of hamburger gravy my Grandma makes and a tater-tot/meatloaf a friends mom makes. It's not very healthy... but one of those "comfort food" meals. I think it has freezer meal potential... but I've never actually frozen one to see how it turns out after. It's pretty quick to make so I've never felt the need to throw an extra one in the freezer.
1-1.5 lbs ground beef
1/2 white onion
Salt & Pepper to taste
1 clove garlic
1 can cream of mushroom soup
8 oz sour cream
1 cup shredded cheese
1 bag tater-tots
Cook ground beef, onion, and garlic until beef is done; drain of fat.
Add cream of mushroom soup and sour cream.
Grease a 9x13 pan. Pour in hamburger mixture. Top with shredded cheese and tater tots. Cook according to tater-tot package directions... or at 450 for 18-20 minutes.
*I usually add a little more flavor to the beef by adding some Worcestershire sauce, chili powder, cumin... whatever I'm in the mood for. You can change it up a million ways by adding what your family likes while your cooking the meat. Sometimes I also add a bag of frozen vegetables...

Oven Fries
This is my absolute favorite way to make/eat french fries!!
Red Potatoes
Olive Oil
Lawry's Seasoned Salt
Wash potatoes and cut into wedges/fry shapes.
On a baking sheet, drizzle with a little Olive Oil and a little seasoned salt. Toss around to coat.
Bake at 350 until tender, 25-30 minutes (I like "fat" fries, so mine take a little longer. But if you like yours "skinny" then obviously they'll cook quicker).

Breakfast Quiche
26 oz frozen hash browns, thawed (dab off extra moisture with a paper towel)
1/2 cup melted butter
3/4 cup ham/bacon, fully cooked
1-2 cups shredded cheese
10 eggs
1 cup milk
Salt and pepper to taste
In a 9x13" pan, build a crust with the hash browns and melted butter, bringing up the sides of the pan. Bake at 425 for 20 minutes.
Whip up all the other ingredients and pour over baked hash browns. Lower oven temperature to 35o and bake for an additional 35-40 minutes until golden.
*You can personalize this recipe anyway you like. Add anything that you think would taste good in an omelet, and it will work great with this!*

1 tsp vanilla
2 eggs, beaten
1/3 cup milk
1/2 cup butter
Topping:
1 cup brown sugar
1/2 cup flour
1/3 cup melted butter
1 cup chopped pecans
Combine sweet potatoes, sugar, vanilla, eggs, milk, & butter. Mix with electric mixer until smooth. Pour into a greased 9x13 pan.
Combine brown sugar, flour, and melted butter into a crumb mixture. Add chopped pecans.
Sprinkle over sweet potato mixture.
Bake in a preheated 350 oven for 20-25 minutes.
