Chocolate Peanut Butter Cookies

This recipe is from my good friend Erin, from high school~ and it is fabulous! Thanks Erin!!!

1 package (2 layer size) devil's food cake
4 oz. Cream cheese
1/2 C. peanut butter
1 egg.

Preheat oven to 375. Place all ingredients in a large bowl and beat with an electric mixer on low for 2-3 minutes (or just stir with a large spoon - I found this method to be less messy).

Shape into 1-inch balls and place on cookie sheet. Flatten each ball, in a criss-cross pattern using a fork dipped in sugar.

Bake 7-8 minutes or until edges of cookies are set. Remove to wire racks and cool completely.

Fudgy Chocolate Layer Cake

3/4 cup butter
2 squares (2 oz) unsweetened chocolate
2 1/4 cups flour
2 cups sugar
1/4 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp salt
1 3/4 cups buttermilk
2 eggs, at room temperature
3/4 cups hipping cream
1 1/2 cups semisweet chocolate chips

Preheat oven to 350. Grease and flour 2 9" round cake pans. In a saucepan, melt butter and chocolate, stirring over low heat.

Combine flour, sugar, cocoa, baking soda, and salt in large bowl. Add chocolate mixture, buttermilk and eggs. Beat on low speed for 1 minute; increase speed to high and beat until light and fluffy, about 2 minutes.

Divide batter between cake pans. Bake until cakes spring back when gently pressed, about 25-30 minutes. Cool in pans for 5 minutes; invert onto wire rack to cool completely.

Meanwhile, bring cream just to a boil. Remove from heat and stir in chocolate chips; mix until frosting is smooth and starts to thicken.

Place 1 cooled layer on cake plate. Spread with 1/3 cup frosting. Top with second layer. Frost top and sides of cake with remaining frosting.

Buttermilk Brownies

2 cups flour
2 cups sugar
1 tsp baking soda
1 cup water
4 Tbsp cocoa powder
½ cup margarine
1/3 cup vegetable oil
2 eggs
1 cup buttermilk
1 tsp vanilla

Frosting:
2-3 cups powder sugar
4 Tbsp cocoa powder
¼ cup margarine, softened
¼ cup milk
1 tsp vanilla

Sift together flour, sugar, & baking soda. In medium saucepan, combine water, cocoa powder, margarine, & vegetable oil. Bring to boil. Add to flour mixture. Add eggs, buttermilk, & vanilla.

Mix together until smooth. Pour into greased 9x13” pan & bake at 350° for 30-40 minutes, or until toothpick comes out clean.

Frosting: cream all ingredients together. Spread when brownies have cooled.
