All you need is :
2 bunches of fresh lively green broccoli
Salt
Pepper to taste
2 Tbsp butter
Shredded Mozarella cheese (up to 1 cup)
Onion - chopped, 1/2 cup
a kitchen blender
- Start by bringing about 1/2 gallon of water to a boil, add salt and pepper and drop in the cut broccoli.
- Boil with a tight lid on for 3 to 4 mins maximum and then discard into a collander that sits in a big shallow bowl.
- Transfer the broccoli to the blender, pour some of the water the veggies have boiled in until the blender is half filled and pulse until thoroughly blended.
-Add seasonings and the cheese along with the onion and blend until very smooth andf silky.
-Pour into a nice bowl, garnish to your desire and enjoy and never think of broccoli the same !
-I also added some chopped grilled chicken breast, just to make it more consistent.
