1st Recipe for 2010:
Ingredient A: Cut into cube or slices,
Chayote, Onion, Green or Red Chilli (here I use Jalapeno),
Optional: Carrot, Celery, etc. Your choice! (Basically any "crispy" or crunchy vegetable can do)
Ingredient B: Seasoning sauce
1 cup light soy sauce
1 cup water
1 cup vinegar
half cup sugar (I use brown sugar)
Rolling boil B and pour it into A. Let it cool.
Ready to eat in 2-3 days. You can also store it in the fridge.

材料: 8 oz牛油, 6 oz幼糖,1粒蛋, 1 teaspoon vanilla香精,250克cheddar cheese,12 oz麵粉
方法: 先将牛油跟幼糖一起打发,加蛋,再打均,加入vanilla,已经预先刨丝的cheddar cheese及麵粉。麵团有点软,可用塑胶袋剪个小洞挤(或像挤鱼丸般,以上图片)170 C烤25分钟或金黄色为止。

南杏小饼干 (很有口感)

材料: 500克麵粉,175克搅碎的南杏或其他杏仁,200克糖粉,1/2 teaspoon发粉(Baking Powder), 1/2 tsp 苏打粉,少许盐,适量油(corn oil or other cooking oil)
方法: 将所有材料混合,慢慢加入适量的油到可以搓成似汤圆状为止。170 C烤到熟(香)为止。
过年剩下的菜肴稍改之后可以变成更好吃的饭菜!“年年有余”

烤鸡烤鸭迎新年
Ayam Golek Opor
1 ekor ayam muda
2 sudu besar cili boh
3 batang serai
1/2 inci lengkuas
6 biji bawang merah
1-2 biji bawang putih
sedikit halia
2-3 mangkuk santan
2 biji buah keras
1 sudu besar ketumbar
1 sudu kecil jintan manis
2 biji kentang (rebus)
2-3 biji telur rebus
garam secukupnya
Cara membuatnya:
1. Ayam dibersihkan dan keluarkan isi perutnya. Hati dan mempedal digoreng dan dimasukkan ke dalam ayam bersama dengan 2 biji telur rebus dan kentang rebus. Perut ayam dijahit.
2. Ketumbar, jintan manis, halia, serai dan lengkuas digiling halus. Panaskan minyak dan tumiskan hirisan bawang merah dan bawang putih hingga naik baunya.
3. Masukkan bahan-bahan gigiling dan cili boh. Tumiskan hingga naik baunya. Masukkan ayam dan dikacau untuk 10 minit.
4. Masukkan santan dan biarkan ayam 1/2 masak. Keluarkan dari periuk dan dibakar dalam ketuhar hingga kuning. Sesekali renjiskan dengan kuah. Kuah yang dimasak biarkan sampai pekat. Hiaskan ayam golek dengan hirisan bawang besar, kacang peas, cili merah dan telur rebus.

烧鸭 Roasted Duck
1 duck
Marinade:
3 tbsp ginger juice
3 tbsp Shao-Xing cooking wine
1 tsp five-spice powder
1 tsp salt
Ingredient for coloring of skin:
1 tbsp maltose 麦芽糖
250ml white vinegar
a little red food coloring
500ml water
Method:
1. Clean duck. Cut off the tips of wings and the webs.
2. Marinate the duck with marinade for 2 hours.
3. Bring the ingredient for coloring of skin to a boil. Bathe the skin for 5 minutes.
4. Hang it under hot sun for a few hours till it is dry.
5. Put the duck into 350 F oven for 1 hour or until golden brown in color. Chop into pieces to serve when it has cooled down.

新cookies
这种饼干非常好吃但我不知该替它取什么名字!
看到有剩下的蛋白,很想做一些不同的糕点,就到食谱里去找,发现了这个recipe。
原本名叫“Tulies d’Amandes”(法国一种屋瓦的名字)但我不按原本食谱做所以应该给它取个新名字吧!
食谱如下:
1/2 杯杏仁,烤香(微黄)
1/3杯糖
3 大匙牛油
2 个蛋白
1/2茶匙杏仁香精
1/4杯面粉(筛过)
1/2杯cheddar cheese
1. 将2大匙的糖和烤香的杏仁一起打成粉状,待用。
2. 剩下的糖和牛油一起打后,加入蛋白打发。
3. 加入杏仁香精,面粉,最后加入(1)料和cheese。
4. 预热烤箱400 F。
5. 先将烤盘涂油,将1茶匙的混合物放在烤盘上用汤匙背将它转成一层薄薄的圆形。
6. 烤6-7分钟至旁边金黄色,一片一片拿出立即放在擀面棍上晾干(冷)。

【蛋燕】
吃过‘蛋燕’吗?这是一种福州人的面条,是一种手工麵来的。
记得小的时候外公常煮这种东西给我们吃。我一直还挂念着它的味道但是就是不懂的怎么做。
最近发现了它的制作方法,很高兴,立刻试一试,很不错。
材料如下:
3粒鸡蛋,3汤匙面粉,3汤匙薯粉,3汤匙清水,半茶匙盐,少许胡椒粉
将所有材料混合好,过滤成光滑的面糊。(像pan cake的面糊)
烧热平底锅,刷上一层薄薄的油,倒入少许的面糊,煎到锅边的蛋皮开始干身离锅,取出,重复做到完。
将一层层叠起来后,卷好切丝(条)就是福州‘蛋燕’了。
‘蛋燕’通常是配上油菜,鲜虾,肉丸,上汤等吃。
它跟其他面条不同的是它又香又滑。
p/s: 这些传统美食若不把它学下来(保留住),恐怕将来很难吃得到了。

新鲜出‘锅’的鱼肉松
昨天朋友送来一大包的三文鱼,我想来想去没办法吃这么多(老公最怕鱼腥味),只好上网查怎么做鱼肉松,终于让我成功做出第一道鱼肉松了,ya-hoo!
我是参考这个网址(http://blog.sina.com.cn/s/blog_3e512ee401000kiq.html)学的,只是要炒好久。可能Salmon鱼的颜色是红色的,所以我做出来的鱼肉松颜色比较深但味道还不错。

Sweet Potato Pumpkin Pie
Since it's Thanksgiving tomorrow, i made some sweet potato pumpkin pies.. They turned out to be really delicious so i want to share it with you guys..Here's the recipe:

Pastry:
1 cup all-purpose flour
2 tbsp superfine sugar
1/4 tsp salt
4 oz cold unsalted butter
2 tbsp ice water
Filling:
2 eggs
1 cup brown sugar
1/2 tsp salt
1/2 cup of milk
1 cup of cooked pumpkin
1 cup of cooked sweet potato
1 tsp pumpkin pie spice (allspice + cinnamon)
Method:
1. To make the pastry, rub butter, sugar and salt into the sifted flour till it resembles bread
crumbs. Mix in cold water to form dough. Rest for 1 hour in refrigerator.
2. Preheat oven to 425 °F (200°C).
3. For the filling, beat the eggs and brown sugar together. Then, add in all the other ingredients
and beat until combined.
4. Press a piece of pastry dough down into a pie pan or muffin pan and press down along the
bottom and all sides. Fill the shell up to the edges with pumpkin and sweet potato filling.
5. Bake at 425°F for 10 minutes, then lower the temperature to 350°F and bake until golden
brown (about 30 minutes).
