A Sweet Little Recipe

Gentle friends, I've had quite a few requests for my recipe for the pralines I've been making.  It's one I made up from watching about 30 really wonderful cooks on youtube making Pralines all different ways with little tweaks .... and then I did my due diligence and read numerous recipes using all kinds of ingredients and different techniques... There are as many ways to Pralines as there are stars in the sky.... this is just my way and those that have gotten them this year have had nice things to say ...
so here goes...

Pralines
Yield 22 to 26

1 1/2 C white sugar
1/2 C Dark Brown Sugar
4 Tbls Salted Butter
1/8 teas Baking Soda
3/4 C 1/2 & 1/2 

2 C Chopped Pecans
1/4 teas salt
1 teas Vanilla

You have to get everything ready before you turn the stove on.... chop up the pecans...

... get the vanilla and salt .....

... layout the piece of parchment on the counter and get the tablespoons ... 

... now you can turn the stove on... put the sugars, butter, soda and 1/2 & 1/2 in a heavy pot, turn the stove on a little higher than medium-high.... start that sucker going...

... keep stirring, not briskly but enough to keep everything a'moving... as it all comes to a boil...

... when the temp hits 211 (by the time I got my camera for the shot it got to 214) I like to add them at this point as the cooking of the nuts makes the praline have a nuttier flavour.

...add the chopped pecans and turn the heat to just under medium-high heat...  by adding the pecans this will bring the temps down a bit and slows the cooking up ...  you now just keep stirring constantly and letting the temp get to 236 on the thermometer...  I missed that shot...  as it cooks the viscosity changes and you'll see the praline pulling away from the bottom of the pan...

... when the temp hits a solid 236 immediately take it off the heat and add the vanilla (or bourbon) and the salt and beat for 3 minutes...

... after the 3 minutes beating drop by tablespoon full onto the parchment paper, this must be done quickly as it will start to get firm the cooler it gets... I let them sit out on the counter overnight before bagging them up...  enjoy!  This takes about 35 minutes or so to make and yields about 22 to 26 pralines depending on the size you make them.

Now, what I was aiming for was a bourbon flavoured praline when I started out and nowhere did I find one so I just replace the vanilla.... and the teaspoon of bourbon in place of vanilla hit the mark and was popular with those that like bourbon, and the alcohol burns off with the heat leaving just the delicious flavour.  But, vanilla it's traditional and for gifting works lovely.  I'm thinking of other flavours of praline and will be experimenting during the year.

Addendum: I had a couple of questions.... 1/2 & 1/2 is a blend of regular milk and light cream... more fat than milk but less fat than cream... I always have some in the fridge as that's what I prefer in coffee, so I thought why not and it worked a dream  I think just cream would work fine or you could thin out the cream with a little milk. 

When I say beat for 3 minutes I mean to keep stirring vigorously for the three minutes.  I also found a couple of times that the praline mixture started to seize up during this time as it was cooling too fast, and I just popped it back on the warm burner for a few seconds to get it back to the right consistency before dropping onto the parchment paper.  I think in the last few weeks I've made enough that I've gotten to that point of knowing the "feel" of the candy, it just comes with practice, but the mixture has to be loose enough to scoop and stiff enough not to run all over the place.  I hope this helps.

A Little Sweet

Gentle Friends, it's going to be a short post today, not much of anything to show and not much going on out here by the Bay.  

We have a very specific routine that we follow most weekends and one of those things is a trip to Trader Joe's.  This past weekends latest visit to TJ's found us shopping as usual. 

Well, before I knew it out of the corner of my eye I spotted a shiny package.....  and then three words..... 

....
dark chocolate, peanut butter and salted caramel....  three things that get my engines going!!  Of course we brought some home and they are delicious!!  I do enjoy peanut butter candy and when you add in dark chocolate and a dab of caramel it makes these truffles pretty close to being perfect!  

Some of these will certainly make it into the Surprise Gift-a-way celebrating my 7th - don't forget to sign up on last Fridays Post.

An Easter Treat......

Gentle friends it just wouldn't be Easter without some....

...Peeps!!  With their catch phrase being "Peeps - always in season" one can enjoy these marshmallow treats year round with different shapes for different Holidays.  Waxing nostalgic I just can't remember an Easter when these weren't a part of my Easter Basket - and now since I have tipped the scale, age wise and am on the slow slide to senility, I just buy them and enjoy.  There are others in my house, and it would be tacky if I was to mention names....... Rico....... that turn their noses up and make a sqinchy face at my Peeps, that's when I feel it is my duty to rip into another box and pop one into the gaping maw!!  

Over the weekend I saw some that were different flavours, and now I feel the need to give them a try..... and as I find other Peepish related stuff I'll be making "Peep Reports" - because I just know that although there are detractors for this wonderful confection, there are just as many that really enjoy them, like Me!!!!

A Little Chocolate

Gentle Friends usually on Mondays I talk about a film or do a catch up on some stitching I working on.  Well, although I have seen a few films recently there is really nothing to talk about there... and for stitching the pieces I have at the framers are not completed and for actual stitching I am working on an exchange piece I am trying to complete before I take off to France for two weeks..... so that leaves me without a Monday Posting.... except, I did bump into a couple of treats over the weekend...... chocolate treats!!

I found this "Wild Ophelia" bar at Walgreen's and was immediately drawn into its delicious dark chocolate web of tasty inclusion.....  BBQ chips!!  "How Interesting" I thought, and so I snatched it up off the shelf and it came home with me.

Inside a broken bar you can see the chips and to me the addition of BBQ chips was interesting, but not a great addition.  I did like the nuance of BBQ smokiness but the extra crunchy bits was not a great as I had thought they would be - there is a whole line of WO bars and I think I will try next the New Orleans "Chili" and then move on to the "Sweet Cherry Pecan" just for comparison sakes don't you know!!  I know I will skip the granola as I really do not like the stuff and can not imagine that even with it being enrobed with delicious dark chocolate that it will improve the basic "outdoorsy crunch" that granola inevitably has.

The second bar is far more delicious, at least to me.....

 ....  this bar by "Chocolove XOXOX" has a bit less cocoa content at 65% than the WO bar but the inclusion is so much better....

.... big hunks of crystallized ginger, I love me some crystallized ginger.  A little sweet heat for your tongue!!!  I love just about anything with ginger in it, and the addition of crystallized ginger was a stroke of genius in my book!!  I have seen these bars a different places, but I picked this one up down on 24th Street at the Whole Foods Market.

Monday with ATS and Some Muffins

Gentle Readers and Dear Friends we had a very low key weekend.  Rico stayed in an just sort of rested!!  He wanted me to pas on his thanks for all the kind well wishes from you all!!!  With all the pills he has been taking over the last couple of days "dizzy and "loopy" are our two new favorite words.  We did get down to the pool yesterday as there was a break in the fog for an hour so although cool and breezy the sun was shining bright.  Saturday I left hi home and ran around Thrift/Estate Shopping and although I hit quite a few places it was another bust.

I did get some stitched on ATS - working on the "Peacock Band" - and here is an update shot...



I am off a stitch or so up and down, but at this point I am not going to worry and "adjust" as I stitch down.

I made some "Donut Muffins" yesterday.  I am sure I have made them before, but can not find the post.....


They are super easy and tasty!!  I'll post the recipe in the morning.

We made a trip to Trader Joe's and I found a "new" favorite candy.....


These are really delicious!!!  If you like dark chocolate and really creamy minty middles then this is a "must try."

A Weekend Posting

Gentle Readers and Dear Friends I do hope you all had a wonderful weekend.  Mine was great - since it was three days long how could it not be!!  Thank you all for all the kind comments about the Valentine I sent to Carol.  it seems that Blogger makes it harder and harder to use, sorry for the odd word verification.   I read that my HOE Ornament arrived at its new home with Erin over at Fairy Tales and French Knots.  Here is a snaperoo of the piece I made for her...


Quite a few of us stitched this piece from Mary Garry for this Exchange.  I have always liked this chart and was happy that Erin likes what I sent.

Keeping with a stitching theme today I had a finish over the weekend....  

 "Tis the Season" Blackbird Designs - 36ct LL Pear - using the recommended Belle Soie

I have been dragging out and enjoying this stitch far too long, but all good things come to an end.

We also got to an Estate Sale - and to call it a mad house would be an understatement.  There were way too many people crowded in one little house and way too many grabby types!!  Eventually I made my way upstairs and in one of the bedrooms was a gigantic pile of linen - from tablecloths to napkins, lace, tatting, pulled work, Berlin lace everything just in a great big pile -  most of the pieces where in not very good condition, lots of holes and stains.  But, digging away (I love to dig) I did pull out a small sampler - not very old and in a very crumpled condition, but very sweet...


The linen is very thick.  I think this was some sort of kit that was printed linen and the stitcher did the decorative stitching.  It is about 8x10 and you can still see the tape that must have held it to some sort of backing for framing.  I think that for .50 it was a total bargain!

It is also that time of year for candy makers to go into overtime....


So, of course I did my part and made it to Walgreens for a sack of delicious black jelly beans!!  A most delicious treat!!

I think I'll wrap up todays post with a snap of my ever-blooming Christmas Cactus'....


This crazy thing is blooming about every three months now - and even the little red one is sort of on the same schedule - since I took this shot on Saturday a bunch of additional blooms have popped out on both plants.

Picking Up the Needle

Gentle Friends, it's been a couple of weeks of really not wanting to stitch so I didn't...however, over the weekend I once again ste...
