Avocado Egg Triple Decker Sandwich

I love Avocado....yum yum...full of nutrition and contain natural fats that is good for my daily diet.  Avocado Egg Triple Decker Sandwich?!! Ahh....that already sounds mouth-watering! That is the best healthy meal to fill a hungry stomach and most of all, it is easy to make! Definitely suitable for a quick breakfast, light lunch, snack or light dinner throughout the day!


AVOCADO EGG TRIPLE DECKER SANDWICH
INGREDIENTS
3 slices of white bread ( toasted )
1 ripe avocado
1 large fried eggs 
1 tomato ( slice )
Thinly slices of cucumber  
3 lettuce leafs
Mayonnaise
Tomato sauce

METHOD
* Slice Avocado and Tomato thinly and set aside.
* Spread Mayonnaise and tomato sauce on each side of the toasted bread. Set aside.
* Place 1 bread on a serving plate, place a lettuce leaf, slices of tomato and cucumber with 1 fried egg, top with 2nd toasted bread.  Add slices of Avocado evenly, top with last piece of toasted bread.
* Served chilled or room temperature.
* Enjoy!

No Yeast Easy Waffle Recipe

This is another one hell of a great recipe you should have in any time of the day for a simple, quick and easy Waffle.

This Waffle do not require Yeast, it taste as good as those with yeast. I can memorize the amount of ingredients even with my eyes closed since i am making this like every 3 days my son for many years now. So far i dont need another Waffle recipe anymore.

 The easiest waffle of all :P

WAFFLE INGREDIENTS:-
( yield : 1000ml ) 

1 3/4cups All Purpose Flour
1tsp Baking Powder
1/4tsp Salt
2 large egg yolks
2 large egg whites
1 3/4cups Milk
1/2cup Oil
1tsp vanilla essence

METHODS:-
* In a mixing bowl, mix in dry ingredients (flour, baking powder and salt ) with a whisk to mix well. 
* Add in wet ingredients (milk, oil, egg yolks and vanilla ) to dry ingredients mix well with a whisk just combined into batter ( do not over mix.)
* In a separate bowl, used a beater to beat egg whites until stiff peak.  Fold into batter with a spatula until all combine, transfer into a measurement jar.
* Heat Waffle pan under low fire on the cooking stove, lightly brush waffle pan with cooking oil. Pour batter on waffer pan, closed lid and let it cook until it is brown at one side and flip over to the other side of the pan until well cooked.
* Served hot.

Note, you can add any fruits on top of waffle.  If you wish to have different flavours of waffle, just simply add your favourite Paste into the batter.

Basic Bread Dough for variety of Sweet Buns

31.12.2014 - This is one of very useful Basic Bread Dough with a large quantity that can use for variety of sweet buns.  Recipe adapted from Kenneth Goh basic-bread-dough-recipe-and-plum-blossom-sausage-buns-  please click link for recipe.

I used Basic Bread Dough Recipe to make "Buttermilk Buns", "Mini Sausage Buns" and "Coconut Sweet Buns".  For buttermilk filling, please refers to butter-milk-buns recipe.   I bake at 180c Pre-heated oven for 25mins or until golden brown.

This dough can make any sweet buns you desire like pizza, redbean buns, hamburger, sausage buns, any sweet bread, doughnuts or hot dog buns etc... as  mentioned on Kenneth's blog.




For Mini Sausage Buns
4 sausages ( cut into half )
1 egg ( egg wash )
Sesame Seeds
Basic Bread dough

Use the same dough to roll up the sausage in any shape you desire, brush egg wash, sprinkle sesame seeds.  let it rest for 15mins and bake at  Pre-heated oven 190c for 35 minutes or until bread turn golden brown.


For Coconut Filling ( for 8 pcs ) 
125g freshly grated coconut
70g caster sugar
30g butter,softened
30g egg, lightly beaten

1. Mix everything together. Divide into 8 equal portions and keep in the fridge to use when needed.
2. Roll out dough in to disc shape, take one portion of filling and seal tightly and flatten it with the rolling pin and shape the buns using any method you desire.
4. Let rise for 15mins, lightly covered, until double in size on a lightly greased tray. When ready, brush with egg wash.
5. Bake in preheated 190°C oven for about 25 minutes or until golden brown.

Triple decker Egg & Cheese Sandwiches

Nongsa, Batam.  Getting a little too hungry and lazy at the sametime! Make a huge triple decker sandwich would be the most ideal meal to fill up my hungry stomach, quick and easy.  Here's the recipe. 



Ingredients :-
2 fried eggs
3 slices of toasted bread
few slices of cucumber
few slices of tomato
small handful salad leaves
butter to spread on bread
2 slices low fat cheddar cheese
Dash of tomato sauce and mayonnaise

Method:
Toast the bread.  Heat pan cook up two fried eggs. 

Spread one slice of bread with mayo and tomato sauce.  Layer on slices of thin cucumbers, one fried egg, a slice cheddar cheese and salad leaf then top with another slice of bread. Add another little salad leave, 1 egg, 1 slice cheddar cheese and slices of tomato. Finish with the final slice of bread spreads with tomato sauce and mayo.  Secure with cocktail sticks and cut into any shape you wish.

serve with mango, fruits or chips! if you like.

Salmon Salad Breakfast

29.03.2014 Nongsa Batm.  Make myself a healthy breakfast quick and easy with a little bit of salmon fishy up my salad.  Dressing i used for this salad are olive oil, salt, pepper, lemon and a whole passionfruit.

31.03.2014 - Nongsa, Batam.  This is Meggi Brand assam laksa instant noodle for Breakfast.  Can look extremely good with some touch of cucumber, mint and little deocoration at the side! :)

Lovely Breakfast


29.12.2013 - Nongsa, Batam.  Love today breakfast! My sandwich simply easy to prepare, 2 slices of toasted bread, topside egg, 1 slice of cheddar cheese, a slice of lettuce and 4 slices of tomato with a dash of tomato sauce and mayo, cut the sandwich into half served.  I got my chocolate muffin too and some fresh cherries!! what a bliss!!

B'day Pancakes for Breakfast

14.12.2013 - Its my Big Day! I make some lovely, fluffy and sensational pancake share with my son! Just too beautiful to eat.  I decorated with fresh strawberries and drizzle with arabic honey and unsalted butter.  Simply delicious. Fluffy Pancake with Grated Cheddar Cheese & Peanut Butter Topping

02.12.2013 - Batam.  Countless times i make pancake for my son and hubby! :) I cook up some fluffy pancake, top with shredded cheddar cheese for hubby and topping with peanut butter for my sonny!



INGREDIENTS
1 cup cake flour/ all purpose flour
1/2 cup fresh milk, mix accordingly one at a time, batter should not be too runny or watery
1 tbp baking powder
dash of salt
2 eggs, separate
1tbsp sugar
2tbsp - vegetable oil/melted butter
1tsp - vanilla essence

Toppings : Grated Cheddar Cheese & Peanut Butter

METHOD
* sieve flour.

* in a bowl, add in sieve flour, sugar, baking powder, milk, melted butter, salt and egg yolks. Mix to combine.  Batter should be thick not watery.

* Beat egg white till sift peak. Add in egg white into batter.  Mix well and lastly add in vanilla essence, is ready to cook.  Batter remain thick not runny.

* Heat non-stick pan, very low medium fire, use a kitchen towel dip in some cooking oil and rub over pan.  scope 1 soup spoonful batter into pan, let it cook slowly till batter bubble on top means cooked and turn on the other side let it cook throughly until golden brown, dish up sprinkle with handful of grated cheddar cheese, peanut butter or just anything you like.
