[nafex] Re: disappointing elderberry
I happened to read an interesting elderberry receipe in "The Joy of
Cooking". They suggested harvesting the entire fruiting head & putting it
on a cookie sheet in the freezer. After frozen, shake the berries loose &
put them in a plastic bag back in the freezer. They recommended adding the
frozen berries to apple pies with no further processing (other than cooking
with the pie). Authors say the berries add a great flavor to the pie, but I
don't have any 1st hand opinion on the matter.

This may be a good issue to bring up at the NAFX meeting. Alot of nurseries
carry elderberries, so someone must like them. All my plants are ripening
now.
I dont think it will EVER freeze here in Georgia in August. Putting the
berries in the freezer
may be worth a try. after that I will try cooking them a bit and see what
that does.
But unless I can graft something interesting to them, I dont
see them staying around much longer.
