Matcha Cookies with Cranberries and White Chocolate - for Chinese New Year



Happy New Year!  Did you go somewhere fun to count down to the new year?  As usual, we stayed home for the count down and had a wonderful feast along with some bubbly to ring in the new year!  While the vacation and days off might be over for some people, the celebration is still going on in my house.

This year, January 28th marks the first day of the Chinese New Year!  In Asia, Chinese New Year is the biggest celebration of the year, comparable to Christmas and Thanksgiving in the U.S.  It’s a 15 days long celebration!  Schools, most shops, and businesses are closed during the Chinese New Year so that everyone can spend time with the family to celebrate.

Although we don’t get any days off for Chinese New Year in the States, I try my best to pass down the traditions and culture to my Kids, mostly through story telling, and more often, through food.  There are many traditional food and special dishes that we prepare mainly for the Chinese New Year.  But some are so good that I pretty much make them all year round, such as these Matcha (Japanese Green Tea) Cookies with Cranberries and White Chocolate.

These cookies are quite simple to prepare.  They are the “slice and bake” type of cookie which you can (and should) prepare the dough ahead of time.  When it comes time to bake, you simply slice the cookie dough into disks and bake them off.  If you haven’t done so, watch my video above to check out my secret/tip on how to keep the cookie dough nice and round instead of having a “flat bottom” while it’s chilling in the fridge.  And you’re very welcomed!  Consider this tip as my Chinese New Year gift to you!

If you like Matcha, you’re going to love these cookies.  They are packed with the matcha flavor and go nicely with a cup of hot tea.  However, Matcha could be an acquire taste for some people though.

These matcha cookies are not too sweet, therefore, the white chocolate chips add a nice touch of sweetness to balance out the flavors.  The dried cranberries not only add a nice contrast of color to the cookies, but also a little tartness and texture as well.

Strawberry Cupcakes–From Scratch 草莓杯子蛋糕




What is your favorite ingredient to enjoy in Spring?  Is it corn, asparagus, peas, mangoes, berries, or all of the above?   I think my family’s favorite has to be strawberries!  During spring break, I took the kids to a nearby farm to pick their own strawberries.  It was a fun and yummy afternoon!

We’ve picked 4 big baskets full of strawberries and really enjoyed them.  Besides eating them as is, I also made these delicious strawberry cupcakes, from scratch!

I added fresh strawberries into the cake batter so that they are nice and moist.  Meanwhile, I mixed some fresh strawberry puree into the frosting so that they are slightly sweet and tart.  I also filled these cupcakes with some strawberry preserves in the center.  Be sure to check out the video tutorial on how to do that without any special equipment.  And of course, a slice of fresh strawberry on top as garnish to make it more festive.  These cupcakes are not too sweet but packed with wonderful strawberry flavors.  This frosting is probably one of the easiest one to prepare as well.

These cutie cupcakes were baked in these individual cupcake liners (see link below on where to purchase).  But you can use regular cupcake pan and liners as well.  I’m sure they'll turn out just as delicious!  These strawberry cupcakes will be perfect for your Spring tea party, or just any afternoon tea time since they are so easy to prepare!

Today’s recipe is truly a culinary advanture of “East meets West”.  I used a traditional Asian ingredient and incorporated it into a traditional Italian dessert.  Let me present to you, Matcha Panna Cotta (抹茶意式奶凍)!

Matcha (Japanese Green Tea) refers to finely milled or fine powdered green tea. The Japanese tea ceremony centers on the preparation, serving, and drinking of matcha.  Nowadays, matcha is also used to flavor foods such as mochi, soba noodles and a variety of Japanese confectionery.  It has a deep, grassy and slightly bitter taste.  It’s extremely earthy and could be an acquired taste if you haven’t tried it before.   If you like this Japanese Green Tea, then you’re going to love this dessert.

As you can see from my video tutorial above, as well as the pictures on this post, I’ve prepared this Matcha Panna Cotta in different containers.  You can serve them in small tea cups, small dessert glasses, or ramekins (then turn them upside down onto serving plates as shown in picture above).

This is definitely a decadent recipe.  The texture is smooth and silky.  It’s not overly sweet but packed with deep and earthy wonderful matcha aroma.  Did you notice that I topped the panna cotta with a small piece of edible gold leaf!?

Rainbow Dark Chocolate Bars–Healthy and All Natural Toppings

My Daughter and I were working on her school project “Trap the Leprechaun” for St. Patrick’s Day.  She decorated her project with a hugh 3D rainbow across a shoebox (a.k.a. the trap).  My Daughter’s plan was to put gold pots at the end of the rainbow and doubled sided tapes inside the shoebox to “trap” the Leprechaun.  Will this trap work?  I am not sure.  But one thing I know for sure is that the colorful rainbow makes me feel happy and its so pleasant to look at!  That inspired me to create these Rainbow Dark Chocolate Bars.

These Rainbow Dark Chocolate Bars are topped with colorful and all natural toppings that are healthy and good for you.  You can use any ingredients that you like to create the rainbow color pattern.  I simply used whatever I had on hand.  Also, I tempered the dark chocolate to make the chocolate bars, click here to read more about tempering chocolate if you’re interested.    Did you know that there are many health benefits of eating dark chocolate?  It’s packed with antioxidants and can help lower blood pressure.  Of course, moderation is the key to any treats.  You can read more here if you’re interested.

Here are the ingredients that I used to create the rainbow pattern; freeze dried strawberries for the red; orange zest for the orangelemon zest for the yellow; Matcha (Japanese green tea powder) for the green; dried Blue Mallow for the blue; and dried lavender buds for the purple!  Also, be sure to use organic oranges and lemons especially when you’re using the zest.  As for the dried blue mallow, I got them from a tea shop.  It creates the most beautiful and dreamical blue colored tea!  You can read more about its benefits here if you’re interested.  The flavor is subtle and slightly floral.  I’ll list all the ingredients and tools that I used at the end of the post for your reference.

When I was at the market the other day getting the traditional boba to make my regular milk tea (it's dark brown in color), I spotted these beautiful rainbow color ones right next to them on the shelves.  Of course, I can't help it but to take some home.  Aren't they cute and gorgeous?

Iced Matcha (冰鎮抹茶)

Matcha (抹茶) is finely grounded or powdered green tea leaves.  It’s popular in the Japanese tea ceremony but usually served hot.  It’s also used to flavor different kind of treats, such as Matcha Ice Cream and Matcha Mochi (<----Chick on the names to see the recipes that I have shared in the past).  There’s a Japanese plaza closed to my neighborhood that serves Iced Matcha.  I love the rich and slightly bitterness of Matcha and the iced version is just so refreshing and really hit the spot with the soaring Southern California temperature, in early October!

This is the traditional bamboo whisk (chasen) used for Matcha.  It’s the perfect tool to get rid of the lumps while preparing hot or cold Matcha.  You can get one by clicking here online.  If you don’t have one, you can also use a regular small whisk for the job.  I love this bamboo whisk!  Not only it works well, it’s simply an art of itself.  Check out the details in the picture below.

This Iced Matcha is a cinch to make.  If you love green tea or matcha, you've got to give this recipe a try.  It’s super refreshing, slightly sweeten, and perfectly delicious.  Of course, it's packed with antioxidant as well.

Here’s how I made it!

1) In a small bowl, or tea bowl (chawan 茶碗), whisk together the matcha powder and warm water until smooth and no lumps.
2) Stir in agave until well combined.
3) Place ice in 2 tall glasses and evenly divided the matcha mixture.
4) Fill up the glasses with ice water, stir well and enjoy!

Super easy, isn't it?  Yes, I finished the whole glass in no time!  My little treat after the photo shoot for sure!

Mixed Fruit Iced Tea (冰鎮水果茶) and a Giveaway!

The official first day of summer is June 21st this year!  Seriously?  I thought summer has arrived 2 months ago.  Well, at least in Los Angeles, it has!  That’s why I’ve been posting Shaved Ice, detox soup, salad, and icy treats recipes on my blog and Facebook page.  I hope you like them all so far.  And today, I have another refreshing and delightful treat for you, Mixed Fruit Iced Tea (冰鎮水果茶).  Plus, a wonderful giveaway that you don’t want to miss, more to that in just a minute.  Have I grabbed your attention yet?

The first time when I tried a sweetened fruit tea was during a visit to Taiwan.  I felt in love with the tea right away.  It’s fruity, refreshing, slightly sweet, and packed with wonderful aroma.  What’s not to love, isn’t it?  Of course, I can’t help it but to replicate it at home.  And I found the tea leaves and a secret ingredient that can take this lovely drink to the next level.  The kind folks at Singing Dog Vanilla sent me a collection of their vanilla tea leaves to try out along with their latest product, the Vanilla Coconut Palm Sugar!

I have to say, the Vanilla Coconut Palm Sugar is the bomb!  You can taste each element from it and the aroma is so complex, yet, each aroma compliments each other.  This is the secret ingredient that I used, to flavor the Mixed Fruit Ice Tea.  Okay, I guess there’s no more secret now.

I’ve always loved Singing Dog’s Vanilla Tea.  I’ve used their Vanilla Blackberry Sage Tea and made a berry version of this tea and it was so wonderful.  Take a look at the tea leaves in the picture below.  You can see the vanilla bean pieces among the tea leaves.  The vanilla aroma would slowly releases while you steep your tea.  You simply can’t get this gourmet vanilla bean aroma from anything else.  It’s sweet, fragrant and oh so soothing.

Each package of Singing Dog Vanilla Tea comes with a reusable tea bag for steeping.

And the plastic bag comes with a re-sealable tape to assure freshness with the remaining tea leaves, how thoughtful!

The traditional fruit tea usually calls for using black tea as a base.  In this recipe, I used the Singing Dog Vanilla Black Assam Tea.  A one cup serving of tea requires 1 teaspoon of tea leave.  Since I’m making a concentrated tea mixture (for a large pitcher), I used 2 tablespoons of tea leaves.  Here’s how I made it.  First, fill the tea bag with the tea leaves, then place the tea bag in a large heat proof pitcher along with the Vanilla Coconut Palm Sugar.

This time, I chose the fruits that are commonly used to make Taiwanese Mixed Fruit Tea.  They are apple, lime, nectarine, and lemon.  You can basically use any kind of fruit you prefer or in season.  Simply pick three to four of your favorite fruit and include a citrus one in there.  The tang from the citrus will brightens up the tea.

Next pour in hot water and let the mixture steep for 5 minutes.  Stir with a wooden spoon until sugar dissolved.  Then, remove the tea bag and discard the tea leaves.  Rinse and dry the tea bag for future use.  Next, pour in some apple juice and ice cubes.

As simple as that, and your Mixed Fruit Iced Tea is ready for your enjoyment!

This will be the most refreshing drink for the summer!  The tea is slightly sweetened and not overly sweet.  The fruits will retain their natural sweetness and as they steep with the tea leaves, they will  release their wonderful flavors into the tea.  You can taste the wonderful vanilla bean and see the little specks in your tea as well.  The subtle coconut and palm sugar flavors give this tea depth, and compliment the black tea and fruit wonderfully.

And the best part of my photo shoot always comes at the end when I can finally enjoy my iced cold drink in these steamy hot days!  Ahhh…..so good!
