'Twix' Bars
So really.... these don't exactly taste like actual Twix bars, but that's the name they were given and truly - they are just as addicting as the actual Twix Bars. Very simple to make and you may not even have to go to the store to get the ingredients because they're very basic. These are just one of the items I made for my holiday baking spree around Christmas. For those of you who are on facebook and 'like' my page, I had an online album of all the things I baked and sold to people. It went really well and I thoroughly enjoyed it! It was exhausting but very fulfilling work for me. I will definitely be doing it again - oh and probably for people throughout the year if they so request! Enough chit chat - here's the recipe.
'Twix' Bars
Ingredients:
Club crackers - about 70
1/2 cup brown sugar
1/2 cup sugar (granulated)
1/2 cup butter
1/4 cup milk
1 cup crushed graham crackers (8 or 9 crackers - about a full sleeve)
1/2 cup peanut butter
1/2 cup butterscotch chips
1 cup chocolate chips
Instructions:
Line a 9x13 pan (you can use a tupperware with a lid) with 1 layer of club crackers. In a small saucepan simmer brown sugar, sugar, butter and milk. After heated up and butter is melted add the crushed graham crackers. Spread over 1st layer of Club crackers careful not to disturb the cracers too much. Add another layer of Club crackers.
In another saucepan melt peanut butter, butterscotch chips & chocolate chips. Spread over the top layer of Club crackers. Let cool and cut. Store in refrigerator if they end up lasting longer than just a few days. :)

Black & White Butter Bars

These bars are fantastically rich with a baked on 'frosting'. Just a small piece is quite enough to satisfy your sweet tooth. Would be great with a small scoop of ice cream or a hot cup of coffee. The picture isn't very good - the bars went so quickly and I had forgotten to take a photo when we first cut into them - so this was the very last piece in the pan. You could make a double batch of the chocolate bottom to have a taller cake bottom - but I wouldn't double the top. They are very moist and a bit gooey. Oh so very delicious.
Black & White Butter Bars
Ingredients:
Chocolate Base -
1 1/2 cups all purpose flour
2/3 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups sugar
1 stick (8 tablespoons) butter, melted
2 eggs
2 teaspoons vanilla
'Frosting' topping -
1 8-ounce brick cream cheese, room temperature
1 stick (8 tablespoons) butter, room temperature
2 eggs
1 teaspoon vanilla
4 cups powdered sugar
1/2 cup white chocolate chips, melted
Instructions:
Preheat oven to 350. Spray a 9x13 pan with cooking spray. In a large bowl combine flour, cocoa, baking powder, baking soda, salt and sugar until well mixed. Add melted butter, both eggs and vanilla and mix until a stiff dough forms. Pour dough into pan and press it down so the bottom of the pan is covered evenly. Set aside.
In another bowl cream together butter and cream cheese with a mixer until smooth. Add eggs, one at a time, mixing well after each. Add vanilla, powdered sugar and melted white chocolate and mix well. Pour over topping over chocolate base and spread evenly.
Bake 35 to 45 minutes or until top is softly golden brown. It will look a little wiggly still, but it will set as it cools. Cool at room temp for an hour then put in refrigerator to cool the rest of the way. Before serving set it out so it has time to come to room temperature. You can dust each individual piece with powdered sugar if you like.

Chewy Vanilla Bars

Sometimes you just need dessert. Sometimes it's a cookie or a thick slab of cake, last night for me it was vanilla bars. These were so easy to make with just basic ingredients and they are so very delicious. Moist and chewy with a rich vanilla flavor. This would go great with some coffee and a friend. :)
Chewy Vanilla Bars
Ingredients:
Bars -
1/2 cup butter
10 ounce bag white vanilla baking chips (about 2 cups)
1 1/4 cups all purpose flour
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
3 large eggs
Icing -
1 1/2 cups powdered sugar
3 tablespoons butter, softened
1/2 teaspoon vanilla extract
2 tablespoons milk
Chocolate Drizzle -
1/4 cup chocolate chips
1/2 teaspoon Crisco
Instructions:
Preheat oven to 350 and grease an 11x7 pan. I used glass. In a small saucepan heat butter and baking chips over low heat stirring frequently until just melted and mostly smooth. It may have a chunky appearance but that's ok. Cool a little bit.
In a large bowl stir remaining bar ingredients. Add the melted mixture and blend well. Spread evenly in pan. Bake 30 to 35 minutes or until toothpick inserted near center comes out clean and cool completely before frosting.
To prepare icing:
In a medium bowl mix all icing ingredients until smooth and spreadable and spread over bars.
To prepare chocolate drizzle:
In a small bowl combine chocolate chips and Crisco and melt in microwave in 30 second increments stirring in between each session until smooth. Pour into a Ziploc bag and move to one corner and cut a bit of the corner off and pipe the chocolate drizzle over top in whatever design you would like. If you want more chocolate drizzle, just double the ingredients.

Chewy Oatmeal-Chip Bars
Ooey, gooey goodness. These are so delicious and there is just a touch of cinnamon & nutmeg that add so much to the taste. Wonderful smells coming from my oven this afternoon!! Serve with a glass of milk for a yummy after school snack!
Chewy Oatmeal-Chip Bars
Ingredients:
1 2/3 cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon cinnamon
½ teaspoon nutmeg
Dash salt
1 cup unsalted butter, softened
1 cup firmly packed light brown sugar
½ cup granulated sugar
1 teaspoon vanilla
2 eggs
2 cups quick-cooking or old fashioned oats (not instant)
1 12-ounce package chocolate chips
Instructions:
Adjust rack to center position of oven and preheat oven to 375 degrees F. Line a 9x13 pan with aluminum foil, shiny side up, pressing out as many creases as possible and grease foil. In small bowl, mix together the flour, baking soda, cinnamon, nutmeg, and salt, pressing out any lumps with the back of a spoon.
In large bowl, preferably by hand with a large spoon, cream softened butter, both sugars, and vanilla until light and fluffy. Beat in eggs until creamy. Add mixed dry ingredients and incorporate them. Stir in oats and chips, blending until they are evenly distributed.
Place dough in pan and spread as evenly as possible.
Bake 18 to 23 minutes (at 375) or until golden brown on top.
Cool completely so they don't fall apart, then cut and store in an airtight container.
