Dates Falooda

Here is a delicious and healthy falooda recipe from Ummi Abdullah. I got this from a magazine, tried out and loved it. You may see slight changes in the measurements, since I tried to make it easy for you, so converted the quantities to cups and spoons. Hope you enjoy!



Ingredients needed,
dates 1 cup
milk 2 cups
condensed milk 1/2 cup
sugar 2 Tbsp
sabja seeds / falooda seeds / black couscous 2 tsp
raspberry jelly crystal 1/4 tsp
almond essence 2 Tbsp
chopped cherry 2 Tbsp



How to prepare,
Soak dates in water for 1 hour.
Soak sabja seeds in 1/2 cup water.
Mix jelly according to the packet instructions and allow to set in the refrigerator.
When it sets, chop it into small pieces.
Take dates, remove seeds and chop into pieces.
Blend together dates,milk, sugar and condensed milk.
Add essence and chill.
For serving,
Put jelly pieces in the bottom of the glass.
Put 2 tsp soaked sabja seeds over it.
Pour the date shake above this up-to 3/4 of the glass.
Add jelly and sabja seeds above this again.
Garnish with chopped cherry.
p.s. I didn't use raspberry jelly crystals, but used a white one, hence the color.

Sweet chutney for biryani / Beetroot-dates chutney

Eat beetroot, or red spinach , its a cure for anaemia, that was the fact I had heard a lot about beet-roots since from childhood.I just thought people say because of its dark purple colour, but later searching lot in net, I could find out many "beetroot health benefits" sites which tell the same thing.. I always loved it in pickled form , which is not a healthy option always,didn't like thoran /dry dish, but later found beetroot pachadi is another good form to consume it without losing its nutrients.I have never seen beetroots with leaves here, and tried to plant the stem part chopped from beetroots, but it didn't grow well..
This time, a sweet chutney for a reader Prathibha and all of you cook yummy biryani. This is a biryani side dish, which comes from Malabar side. This recipe is from Mrs.K.M.Mathew, with few changes.

Dates Chutney / Eithappazham Chammanthi

Though I had seen a number of dates pickle recipes, a chutney was new to me! It needed only few ingredients and was so simple.I prepared it on a salkkaaram day, without any hope. But for my surprise, every one asked it again.Nowadays mom makes this most of the days, it seems she forgot our poor old local chammanthies.. :) Enjoy this sweet chutney!



Dates Chutney / Eithappazha chammanthi Ingredients
Dates 8
curry leaves few
pearl onion 1
garlic cloves 4
green chilly 3 or 4
coconut grated 1/2 cup
vinegar 1 tsp
salt enough



How to prepare
Chop dates into pieces.Crush all the ingredients together except dates and vinegar in a grinder.Add chopped dates and crush again to make a thick paste.Add vinegar and mix well. Check salt.

Dates Pickle / Eithappazham Achaar

I am not in love with any spicy dates preparations like pickle, chutney etc. But here everyone loves it and all the leftover dates we bought for iftar have been modified into two of these forms.
This is for my reader Indu - who had asked for the dates pickle recipe.Hope you enjoy this sweet, spicy and sour delight!



Dates Pickle ingredients
Dates deseeded and chopped 2 cups
garlic paste 2 tsp
ginger paste 2 tsp
green chillies chopped optional
garlic pearls few optional
curry leaves chopped few
fenugreek 1/2 tsp
mustard seeds 2 tsp
chilly powder 1 Tbsp
coconut oil 1 1/2 Tbsp
vinegar 1/2 cup
salt



How to prepare
Chop dates into 4 pieces (or make small pieces). Heat pan, pour oil.Allow mustard seeds and fenugreek seeds splutter.Saute garlic - ginger paste and chopped green chillies and curry leaves for few seconds. Add red chilly powder, salt, vinegar and allow to boil. Put chopped dates into this, mix well. Pour little boiled water if you want to get a loose texture. Add little more vinegar for your desired sourness.

Pazhampori and Eithappazham Porichathu / Banana and Dates Fritters



Banana fritters / Pazham Pori

ananas - ripe / nenthrappazham 2
atta / whole wheat powder 3/4 cup
rice powder 1/4 cup
cardamom powder 2 pinches optional
egg 1 optional
sugar 2 tsp
water
oil



How to prepare
Cut banana into three equal pieces. Chop each piece ( length wise ) into three equal pieces. Make a thick batter mixing all the ingredients above. Dip banana pieces in this and shallow fry in oil.



Dates fritters / Eithappazham Porichathu

cashew nuts or almonds 15
atta / wheat flour 3/4 cup
rice powder 1/4 cup
sugar 2 teaspoons
water
oil

Roast cashew nuts in little ghee. Or apply little ghee on cashew nuts and microwave it for few seconds.

Make a slit on one side of the date. Remove the seed through that. Replace a cashew nut or badam instead of the seed. Join the side by pressing gently. Do this for all the dates and cashews. Make a thick batter using water, atta, rice flour and sugar.
Heat oil. Dip the dates in the batter and deep fry them. you can fry 4 or 5 together. Let them not to stick to one another.
You can use maida instead of atta. Adding egg will make the banana fritters more crispy. I haven't tried egg for frying dates.

Dates And Almonds Drink

Dates have a special place in the lives of Beduins (Nomadic tribe of Arabs) in the Arab world. It is the great fruit rendering enough energy to them. Muslims take it to break fast, because of the health benefits it provides to our body.
While searching for my daughter's social studies project, I happened to read an anecdote from a UAE site. One evening a local Bedu received a letter and there was no sufficient light for him to read it.His wife soon kneaded some dates, and formed a cup. She poured some melted butter into it and placed a wick using some threads and lit the lamp! After finished reading the letter, the man threw out the wick and ate the cup! What an interesting tale , isn't it?



Dates and Almonds drink(Eethappazham Badam Juice)

Dates 15
almonds 15
milk 2 cups or more

Soak dates in 1 cup of hot water for 1/2 hour. Remove seeds. Soak almonds in water for overnight and and peel it.Blend them together with the water used for soaking dates and 1 cup of milk.Add the remaining milk according to your taste. Making paste of almonds and adding it will avoid forming granules in the drink. Since the dates are enough sweet, no need to add sugar.
For removing the skin of almonds in a hurry, just pour boiled water to the almonds, and keep it in that for five minutes. Then peel it easily..
