I tried this when my aunty asked for a carrot pudding recipe. She didn't like the very soft one, so I tried to prepare it with some cream, the outcome was not very thick, but was delicious!

Vegetable Cutlets
A reader Shahana had left a comment on the previous post about taking lemon juice after fasting.She says it is not good to take an acidic drink in an empty stomach. Many think so.I believe, if the stomach is empty or full, lemon is a good thing to drink.Since long am practising the same and haven't experienced anything bad with that.When I was a child , I had read in a book (prophet's medicines, I think) the only sour thing which do not harm our body is lemon. I don't know how much of this is true. (I have never found a hadith regarding this until now.) You all know, Arabs use only good and healthy ingredients in their cooking. And lemon is widely used in Middle Eastern Cuisine.
I have read some where, the acidic quality of lemon changes to alkaline after it is digested. You can read similar words here,
Foods such as orange juice and lemon juice are acidic in their natural state but turn alkaline after they have been metabolized in the body. As such, for dietetic purposes they are usually considered to be alkaline forming foods despite being acidic prior to consumption. Most fruits are alkaline except a few that include cranberries, plums and prunes. These fruits are classified as acidic because they contain acids the body can't metabolize.

Squeeze half of lemon into a glass of warm water, add enough salt and Drink! :)

Jaggery / Sarkkara Carrot Cake
All of my baking equipments are packed and thrown to the upper part of the cupboard. Hope I can restart my baking experiments once after the house renovation is done.
This Carrot Sarkkara Cake which I had tried a few months ago, kids thought it is chocolate, seeing the outer part! The carrots disappeared when the cake was done, so there was no worry for them about eating it. Everyone who tasted the cake couldn't find the carrots in it.. :) I hope, this would be a healthy option for those who try to avoid ordinary sugar in their cooking. Moreover, addition of carrots make it more healthy..
What I used for making this Carrot sarkkara cake
Carrot 2 cups grated
maida 2 cups
baking powder 1 3/4 tsp
jaggery 4 big blocks
ghee or butter 3/4 cup
eggs 2
cardamom powder 3/4 tsp
cashew nuts few
essence as per taste
How I prepared
Melt jaggery in very little water. If impurities are there, strain and allow to cool.
Beat egg and ghee / butter together. Add baking powder , maida, carrots,cardamom powder, essence and melted jaggery into it and mix together in the food processor without forming lumps.
Grease a non stick pan.Add the above mixture into it and place the cashews over it.
Bake in a preheated oven for 45 minutes in 175 degree C. Or bake until done.

Vegetable Noodles
Ingredients
Noodles packets 3
Beans 10
carrot 1
cabbage chopped 1 cup
capsicum chopped 1
onion 1
ginger julienned 1/2 inch
soya sauce 2 tb sps
pepper powder 2 tsp
oil
salt
Method
Cook the noodles in water with the seasonings available with it. Drain water and keep it aside.
Chop beans and carrot into thin long strips. (You can use other vegetables too)
Heat oil, saute chopped onion with ginger. Don't saute much as we do for curries. Then add chopped beans and carrot with it. Add little salt and stir until they are nearly cooked. Add cabbages, capsicum , pepper powder and soya sauce and stir. Add noodles too. Mix well. Have with tomato ketchup.

Vegetarian Omelettes
Eggetarians cannot taste this like real omelets, though this is a good option for vegetarians. You can add tomato,mushrooms, ginger or any other vegetables according to your taste. This is a best filling in sandwiches too.
Ingredients for making Vegetarian Omlette
Besan / gramflour / kadalamavu 3/4 cup
Maida 1 tb sp
yeast 1/2 tsp
Beans chopped 1 tbsp
carrot chopped 2 tbsps
cabbage chopped 1 tbsp
onion chopped 1
green chilly 1 or 2
coriander leaves chopped 1 tbsp
pepper powder 1 or 2 tsp
garam masala 1/4 tsp
water
salt
oil / ghee
Mix besan, maida and yeast together with enough water to get the consistency of dosa batter.Keep it an hour or more to rise. Add all the chopped vegetables, salt and powders. Heat a pan, spread little oil / ghee then pour 1 ladleful of batter. Turn over when one side is done. Make small omelettes. Cook this on a medium heat, turning frequently.This will help to cook the inner part very well.

POTATO AND CARROT CURRY
Ingredients
Potato – 2
Carrot -1
Green peas cooked -1/2 cup optional
Green chili – 1
Tomato -1
Onion -1
Turmeric – ½ teaspoon
Chili powder – 1 teaspoon
Water -11/2 cups
Oil – 1 table spoon
Mustard seeds – ¼ tea spoon
Salt
Curry leaves
Coriander leaves
Method
Cook the vegetables , chopped onion, tomato,green chili with salt, water and powders.
Cook till done.
Heat oil.
Splutter mustard seeds.
Add curry leaves and chopped coriander leaves.
Good with chapathi.

Vegetable Soup
INGREDIENTS
chopped onion - 1 small,
vegetables like carrot - 1 medium size,
cabbage - 25o g,
beans - 250 g,
potato - 1 medium size etc.
(you can add different types of veggies if you needed) .
Chop all these very finely. Chop one onion med size.
METHOD
Heat one teaspoon of butter in a pan add chopped onion.
Add all the vegetables.
Saute all these for three minutes.
Add 2 cups of water.
Mix with one teaspoon of cornflour.
Add salt.
Pressure cook this till three whistles.
Open add little pepper powder.
If you need sourness add little lime juice to this.
