Snickerdoodle White Chocolate And Cashew Nut Blondies



The idea is derived from a website I chanced upon while searching for  plain and simple treats for the resort's nightly turn down service. The original recipe called for white chocolate. I wanted to add more texture and flavor to the cookie so I reduced the amount of white chocolate by half and added chopped cashew nuts. To save time, I  opted to sprinkle cinnamon sugar on top rather than sandwiching it between the cookies. It may not yield the same result but during busy season I can't afford to spend long time working on one thing. I plan to have a go with it when it gets quieter at the resort to see what difference does a layer of cinnamon sugar in between  make.

A Rockier Road This Time



Not so long ago, I made rocky road bar for turn down service.  The top did not turn out "rocky" as I anticipated so I decided to give it another go. I wanted to get it right the second time around. This time I strived for an  elegant look to make the chocolate bar wildly enticing. I also didn't add just one type of nut. Instead I used assorted nuts that included cashew nuts, sliced almonds and walnuts for that chunky goodness. I divided the rocky road topping in half. I stirred  half with the chocolate mix and poured it in a lined tray. I then spread the other half evenly on top. I covered the mixture with a grease proof paper and left it overnight in the fridge to set.

Coco Pops Bar



Here's a recipe for coco pops bar I have found online-  a decadent treat with a rich and chewy honey-butter base. Perfect for kid's party, sleep over and even for potluck. These are easy to make and require no baking. With only five ingredients, you can create something that will surely please a crowd.

Soft, Chewy Brownies




The manic holiday season is over! The resort's occupancy level is back to normal. I can take things easy  for now.  Looking back, I still could not believe how I  survived  the holiday festivities. It wasn't something I anticipated. I can honestly say I take pride in efficiently handling the most challenging role ever assigned to me. Mission accomplished! Moving on I have all the time in the world and I will make the most of it.

If you have been following my blog just like my long lost brother in RI (LOL),  you may have noticed  my update everyday. Well,  I have revised my dessert menu for our in-house guests and I want to share what I have been making .I started fresh yet again with brownies. Soft, chewy and chocolatey goodness!

Chocolate Overload - A bribe to see more of the Azkals

Two weeks ago, I had this chance to see a qualifying match between Thailand and Philippines for Asean Football Federation (AFF) Suzuki Cup 2012.  I'm not a crazy sports fanatic but when I found out that the AZKALS were playing, I bought a ticket. The team's soaring popularity got me intrigued. Is their good physique the reason for them being famous? Well, they're in Bangkok to play. I would not miss it for the world.

Fast forward to the night I watched the game.When the AZKALS came out for the first time to do some warm up, I was standing one hop away from them.Yeah boys! I got starstruck  but I made sure I click my camera as they walk past me. I was not able to take good pictures of some and I didn't want to go home without getting a better shot. I made a promise to  the girls  (sister, cousin and friends) that  if they  let me stay a bit longer to meet the AZKALS "backstage" I  would make them a nice dinner. Well, they did but imagine how I felt when I found out that the "backstage" was off-limits to fans. Bummer!

Anyway, a promise is a promise. I cooked an awesome dinner on Friday. I baked brownies loaded with dark chocolate chips. I served it with double dutch ice cream and drizzled them with chocolate syrup. Yum Yum!

Funfair is an opportune time to make some extra cash

My big sister's job is such a blessing. Through her I was able to establish connections with a whole lot of people at her school. I use those connections to advance my career as a pastry chef and to earn extra income.

Like this weekend, Niva International School held it's annual funfair. I know for a fact that events like school funfair is not complete without food.  A close friend, Irene who is the Head of the Kindergarten suggested I sell bakery products at the fair. It's my chance to advertise my baked goodies and make some extra cash.

Fudgy Brownies

The Children's Ministry Department at church will be having a potluck after the service on Saturday. My sister , one of the few Sabbath School teachers, is bringing carbonara and as one of the Primary kids' "sponsor" I made this fudgy brownies especially for them. I know kids love chocolate and this is the closest I can do to show them my support.

Chocolate Fudge - True American Dessert

My friend, whose dad had been craving for a chocolate fudge cake, introduced me to this American dessert. He requested me to make one for him. It was my first time to hear about this particular dessert and I wanted to make it right so I googled it and found out that this cake can be baked or chilled. I found a simple recipe that only required melting the ingredients. I rang my friend to ask if that was the one he wanted. He said yes and I started preparing every thing I needed to make this dessert.


Marshmallow, butter, sugar went into the pan.

Chocolaty Brownies

My family and relatives spent the day after Christmas at a park close to home. Each family brought their own share of food. I brought dessert!

I discovered this brownie recipe while browsing online. I modified the recipe a little. The chocolate and butter were melted together. Eggs, sugar and honey mixture, and vanilla were beaten at hi-speed for about 10 minutes until light and fluffy. The chocolate mixture, flour and salt were blended in to the egg mixture. Chocolate chips were stirred in to the batter and then baked for 30 minutes at 160 degrees Celcius. It was cooled completely before frosting. Melted white chocolate was used to decorate the top.

As soon as I removed the plastic lid, everyone gathered round me to ask for their portion.
