Overnight Muesli

I used to do a lot of international travel with my job and became a bit of a hotel breakfast buffet connoisseur.   The European buffets especially intrigued me.  Broiled tomatoes for breakfast?  I can get on board.  Blood sausage?  Never.  They always had a large selection of deli meat and cheese with hard rolls and butter.  That was pretty standard.  The buffets usually had muesli as well.  I was a huge fan of that dish. 

According to Wikipedia, Muesli is "a popular breakfast meal based on uncooked rolled oats, fruit and nuts.  It was developed by Swiss physician Maximilian Bircher-Benner for patients in his hospital.  It is available in a packaged dry form, ready made, or it can be made fresh."  I guess that is why it is often called Bircher Muesli.  Thank you Wikipedia!  I often wondered that.

I always assumed muesli was filled with cream (and maybe it is at the hotels), but I realized I could make my own version with very little fat and it still tasted like it was doused with rich cream.  Rolled oats are soaked overnight in fresh orange juice and water.  The next morning I add a grated granny smith apple and fat free Greek yogurt.  The yogurt is what makes it creamy and rich.   I love making muesli at the beginning of the week and enjoying it all week for breakfast.  It is a super healthy breakfast that is also very filling.  It is a refreshing change from hot oatmeal, if that is your standard.

You can top off muesli with a variety of toppings like berries, coconut, pecans, walnuts, almonds, honey, peaches, bananas, raisins, etc.  My favorite combination is berries, honey, sliced almonds, and dried cranberries.

World’s Best Oatmeal Chocolate Chip Cookies

Why yes, I did make up the name of this recipe! 
In my house, no other attempt is made at improving the oatmeal chocolate chip cookie, because we have the best right here.
I have mentioned my love of the show, Friends, on this blog.  One of my all-time favorite episodes is the one with Phoebe’s cookies.  Monica was dying to know Phoebe’s grandma’s secret recipe for chocolate chip cookies.  Apparently it made the best chocolate chip cookies in the world.  Monica made many attempts to recreate the recipe, with no luck.  Of course hilarity ensued when she got to the bottom of the story.  I could try to retell the story, but you might as well just watch it.  Never gets old.
Funny enough, this recipe was actually passed down from my great grandma Lucy.  I’m not kidding when I say it is the best.  The cookies always turn out chewy on the inside and slightly crisp around the outside.  My mom has been making them for us our entire lives.  I am 99% certain that is what we are eating in the picture below.  I never thought I would go topless on this blog….
You can also vary the cookies by adding coconut, butterscotch chips, or walnuts.  Personally, I prefer the old standard, oatmeal and chocolate chip.

The Perfect Pairing for this fantastic recipe is to freeze the leftover dough in ready-to-go cookies.  The recipe makes a big batch of cookie dough so there is always some leftover for the freezer and it freezes really well.  If you are feeling super organized you can scoop out perfect portions with your spring-loaded scoop, layer them between waxed paper, and freeze.  If you want just one cookie (yeah, right) you can pull it out and bake one off in the oven, or even in the microwave.

Baked Pumpkin Chocolate Chip Oatmeal

If you have never tried baked oatmeal, you should give it a shot.  It is like a mix between an oatmeal bar and your typical breakfast oatmeal. It can be modified a hundred different ways to incorporate your favorite flavors.  This version is one I whipped up with things I had on hand.  It has a decidedly fall feel to it but would be good all year long.  It is great leftover, just warm it up a bit and you have breakfast.  I like to make it during the weekend and enjoy it for breakfast the rest of the week.  It is a nice change from my usual instant oatmeal at work!
The Perfect Pairing for this baked pumpkin chocolate chip oatmeal is a cup of your morning coffee.  I just started drinking coffee a few years ago and now it is something I look forward to in the mornings.    The slightly sweet flavor of the baked oatmeal is perfect with your morning cup of joe.
