Hello My dear loyal readers, sorry I have been so slack in posting anything, I hope you are still out there and haven’t lost interest in my little blog.
I thought it was about time I pulled my head out of the sand and put something up. So today I give you a ginger loaf, which is so comforting as winter has approached and you want something filling and satisfying. Its pouring with rain at the moment in Melbourne and doesn’t show any signs of stopping, good for the garden, but not good for the washing. The type of weather its best to stay in bed and keep the blankets firmly pulled over your head, which is exactly what I did.
I highly recommend serving this straight from the oven when it is still warm and piping hot. It has such a warm homely aroma which fills the house with warmth perfect for a winters day. I have served it with a butterscotch sauce as it reminded me of a sticky date pudding, without the dates of course, saying that you could always throw some it. Either serve it with some vanilla ice cream or some cream to cut through the sweetness of the sauce or you will get such a sugar rush.
- 2 cups plain flour
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
- 2 teaspoons baking powder
- 1 cup boiling water
- 1/2 cup golden syrup
- 100 g butter
- 1/2 cup brown sugar
- 1 egg
- 2/3 cup of thicken cream
- 3/4 cup brown sugar
- 50g butter
- Pre heat the oven to 180C
- Sift together the flour, cinnamon, ginger, cloves and baking powder into a bowl and set aside.
- In a separate bowl combine the water and the golden syrup and stir until the syrup has combined with the water. Place to the side.
- Cream the butter and the sugar together until light and fluffy then add the egg and stir through. Slowly stir in the flour and water mixtures a little at a time alternating between the two, until all the mixture is combined.
- Pour into a loaf tin and bake for 45 minutes or until cooked.
- To make the sauce, [lace all the ingredients into a saucepan and stir occasionally on a medium heat bring to the boil.
- Reduce the heat and let the mixture simmer until it thickens, this should take about 5 minutes.
- Serve either once the loaf has cooled or ideally straight from the oven.

Any substitute for golden syrup??

Thanks for your message. I would substitute it for either maple syrup or molasses. The molasses would give it a darker richer flavor so I would be inclined to use that, I think it would work very well for this recipe. I hope that helps, please let me know if you make it.
