    The trick to keeping these soft on the inside for a few days is to store them in an air tight container. If you leave them out, they will turn hard the same way that bread will. Earth balance margarine works very well too; I use that just the same. Also, any vegan cream cheese will work as an egg substitute; I love Trader Joe's vegan cream cheese too!

    Nice recipe. I modified it to include yeast to give it a little more fluff to the dough, though It came at a cost of extra wait time. I also reduced sugar to 1 cup raisins to 1/2 cup then increased cinnamon to 2 Tbsp and added a tsp of nutmeg. I loved the volume of carrots and nuts. I may experiment to add even more carrot in further variations on this recipe!

    I think this recipe is good enough except for the 'maybe' typo error on the salt. Use 1 tsp instead of 1 tbsp (that's too much!) I never use egg in my kofta, just mixed everything and let stand in fridge for a couple of hours ~ that should bind the meat well. Also, can substitute the seasoning with Corriander seed (pounded) and cumin powder. Happy trying :D

    I used almond milk and coconut milk (half and half) instead of the orange juice, but added the zest of an orange to keep the citrus flavor in. I used brown sugar and pecans, and it was just delicious! They look good and taste amazing! Crispy topping with soft, moist interior. It's a keeper, for sure!

    Hey there again :) The potatoes were out of this world and a huge hit with the hubby (who would have eaten half the pot if he could have!) Definitely saved the rest for lunch. Thanks sooo much for the excellent recipe. 5-Over and over again!!!

    Well, if there was such a thing as Granola oil - I'd buy it. It sounds yummy doesn't it?

    I'll let you know how the vegan cake comes out. It is for an office party. I'll be using a citrus/powder sugar glaze on it.

    Smokey shrimp are a gift from heaven, dear. Love the stuff. I live for smoke and shrimp......good grief, I've spent months trying to find a smokey shrimp and grits recipe. Love the stuff. Glad you shared the recipe and so is my family!

    You asked about us fasting foods except fruits and vegetables. While many use the "Daniel Fast" for detoxing, we're on it for the spiritual side. I'm linked with a group going to The Call DC. We're taking this time to pray for our nation. The omitting sweets and things we love just reminds us to pray! Then we end up reaping many physical benefits, also. We did this for 40 days last summer and I believe that our eating stayed improved thereafter- even though we went back to baking goodies and such, we still kept eating better foods- grilled chicken, not fried, stayed away from red meats,and etc.
