Sweet Potato Pudding Served with Pickled Cucumbers

- 3 cups of grated sweet potatoes shopping list
- 1/2 tsp. salt shopping list
- 1 tbs. butter or margarine shopping list
- 1 tbs. sugar shopping list
- thyme a must shopping list
- parsley or marjoram shopping list
- chives shopping list
- Pinch clove shopping list
- 1 lg. finely chop onion shopping list
- 1/2 scotch bonnet pepper finely chopped or shopping list
- 1/4 tsp. black pepper shopping list
How to make it
- Mix all ingredients together and cook in an open pot under a moderate heat, stir constantly.
- Pickle:
- Peel and dice and slice 2 large cucumbers on your grater and one medium onion, then add parsley, salt and lemon or lime juice, scotch bonnet pepper or yellow pepper sauce. let stand 15 minutes before serving with Potato pudding.
