Black Beans and Ham

- 16 ounces dry black beans shopping list
- 4 tablespoons olive oil shopping list
- 1 large onion, chopped shopping list
- 3 cloves garlic, minced shopping list
- 1 tablespoon cumin shopping list
- 1 tablespoon chili powder shopping list
- 1/4 teaspoon crushed red pepper flakes shopping list
- 1 large meaty ham bone shopping list
- 2 quarts water shopping list
- GARNISH: shopping list
- chopped cilantro, chopped scallions, chopped onions, chopped bell pepper, salsa shopping list
How to make it
- Sort beans.
- Place in 4 quart pot or bowl and cover with water to 2" over beans.
- Allow to sit overnight.
- Drain and rinse beans in a colander.
- Warm olive oil in 6 quart pot over medium heat.
- Saute the onions and garlic until onions are translucent.
- Add cumin, chili powder and red pepper flakes, cooking and stirring until spices have melded with oil and are very fragrant.
- Add beans, the ham bone and the water.
- Cover and bring to a boil.
- Reduce heat and simmer for about 1 hour, until beans are tender.
- Garnish and serve.
