- 4 potatoes,whole shopping list
- 3 cloves of garlic,crushed shopping list
- 1/4 teaspoons salt shopping list
- 1/2 Cup oil shopping list
- 1/2 Cup olive oil shopping list
- 1/2 Cup vinegar shopping list
- Cooked beets (or) Fresh vegetables(steamed very so lightly,then into a ice bath,drain on towel) shopping list
How to make it
- Cook the potatoes until tender,then peel off skin.
- Mash the potatoes and garlic together with the salt until smooth.
- Whip in the oil and vinegar,alternately,by small amounts.
- Chill.
- Serve with the cooked beets(or) as a dip for the vegetables.
