How to make it

  • Slit the egg plant lengthwise &fry in oil by adding some salt&keep aside
  • In a pan,add oil,add the mustard seeds,fenugreek,curry leaf once they splutter
  • Then add, the chopped onions,green chilly&fry till they turn golden brown
  • Then add the chilly,turmeric,coriender powders&saute in the oil
  • Add the tomato paste,cook till the oil is seperated from the gravy
  • Now,add the fried eggplants&saute it
  • Add the tamarind juice&coconut paste.allow it to cook for 5-10min
  • Adjust the salt
  • This can be served with rice&fried potatoes....
