Eggplant Curry

- Young baby egg plants 4-5 shopping list
- onion 1 chopped shopping list
- tomato 2 paste shopping list
- 2 green chillies chopped shopping list
- 1/2tsp turmeric powder shopping list
- 1tsp chilly powder shopping list
- 2tsp coriender powder shopping list
- tamarind juice(lemon size tamarind soaked in warm water&extract juice) shopping list
- coconut paste(optional) shopping list
- mustard seeds 1/2 tsp shopping list
- fenugreek 1/2tsp shopping list
- curry leaves shopping list
- salt to taste shopping list
How to make it
- Slit the egg plant lengthwise &fry in oil by adding some salt&keep aside
- In a pan,add oil,add the mustard seeds,fenugreek,curry leaf once they splutter
- Then add, the chopped onions,green chilly&fry till they turn golden brown
- Then add the chilly,turmeric,coriender powders&saute in the oil
- Add the tomato paste,cook till the oil is seperated from the gravy
- Now,add the fried eggplants&saute it
- Add the tamarind juice&coconut paste.allow it to cook for 5-10min
- Adjust the salt
- This can be served with rice&fried potatoes....
