Steak Creole

- 6 1-inch thick rib eye or sirloin shopping list
- 2 tbs chives, chopped shopping list
- 1 sprig thyme, minced shopping list
- 1 fluid oz Barbados or Trinidad rum shopping list
- 1/2 cup beef stock or consomme shopping list
- 4 tbs butter shopping list
- 1 tbs worcestershire sauce shopping list
- salt and pepper to taste shopping list
- sugar to taste shopping list
- 1/2 tsp cornstarch shopping list
How to make it
- Put butter in a heavy skillet over moderate heat. When the butter has foamed and begins to subside, it is right for the steaks.
- Cook steaks in butter, 2 at time, turning frequently for approximately 4 minutes until medium rare.
- Test steak by cutting a small incision in it. When correctly cooked, remove to a platter, keep warm, and continue to cook in the remaining steaks.
- Put all the cooked steaks into the skillet. Season with salt and black pepper. Add chive, thyme, and saute for 1 minute.
- Then add stock, rum, worcestershire sauce , and sugar and cook over low medium heat, scraping up brown congealed bits from bottom of pan.
- Add more salt if desired and cook until syrupy.
- Thicken sauce with 1/2 tsp cornstarch dissolved in 1 tbs of water.
- Pour sauce over steak and serve hot.
