Sweet Potatoes Extraordinaire

- 3 large sweet potatoes, baked shopping list
- 1 1/2 cups white sugar shopping list
- 3 eggs, beaten shopping list
- 1/2 cup butter, melted shopping list
- 1 cup evaporated milk shopping list
- 1 teaspoon ground cinnamon shopping list
- 2 cups miniature marshmallows shopping list
- 1 cup flaked coconut shopping list
- Topping shopping list
- 1/2 cup packed brown sugar shopping list
- 1 cup chopped pecans shopping list
- 1/2 cup butter, melted shopping list
How to make it
- Genereously butter a 9x13 inch baking dish or casserole.
- Bake the sweet potatoes until soft. Peel and mash (this may be done ahead and kept in the refrigerator until you're ready to prepare the casserole).
- Mix mashed potatoes together with sugar, eggs, butter, evaporated milk, cinnamon, marshmallows and coconut; place the mixture into the baking dish.
- In a small bowl, mix together brown sugar, pecans and butter; spread the topping over the casserole.
- Bake 30-35 minutes at 400 degrees.

Wow! Sounds VERY sweet (my husband would not mind at all), but I like the addition of the coconut. That would be very good. The evaporated milk would make it more like a delicious sweet potato casserole. Great post Krum.
