Chicken Florentine

- 3 whole chicken breasts, boiled and halved ( I nuke them) shopping list
- 3 bags ready-to-eat spinach (or more) shopping list
- 1/2 cup onion, chopped shopping list
- 1/2 cup butter shopping list
- 1/2 cup all-purpose flour shopping list
- 1 cup chicken stock shopping list
- Dash pepper shopping list
- 2 cups light cream shopping list
- 1/2 cup parmesan cheese shopping list
- Dash nutmeg shopping list
How to make it
- Have cooked chicken set aside on a platter.
- Preheat oven to 375 degrees F.
- Cook and chop the spinach.
- Melt butter in saucepan.
- Whisk in flour, pepper, broth and cream.
- Cook and stir until thick.
- Remove from heat.
- Stir 1/2 cup of sauce into spinach along with half the cheese and the nutmeg.
- Place spinach mixture into a 13x9x2 baking dish.
- Arrange chicken pieces on top of spinach.
- Pour remaining sauce over all.
- Sprinkle with the rest of the Parmesan cheese and more nutmeg, if desired.
- Bake, uncovered for 25 to 30 minutes.
