Cinnamon Zucchini Bread

- 1 cup grated zucchini shopping list
- 1 cup sugar shopping list
- 1/2 orange, grated. Use fruit, juice and peel. shopping list
- 2 eggs shopping list
- 1/2 cup butter, melted shopping list
- 1 tsp vanilla shopping list
- 1 1/2 cups flour shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 2 tsp cinnamon shopping list
- 1 cup raisins shopping list
- sour cream Glaze: shopping list
- 2 tbsp sour cream shopping list
- 1 cup sifted powdered sugar shopping list
- 1/2 teaspoon vanilla shopping list
How to make it
- Beat together the first 6 ingredients until blended.
- Combine and add the remaining ingredients.
- Stir until dry ingredients are just moistened.
- Do not overmix.
- Place batter into a 9 x 5 x 3 greased loaf pan and bake in a 350 degree oven.
- Bake for 50-55 minutes.
- Allow to cool for about 30 minutes.
- Mix the ingredients for the sour cream glaze and then frost the bread.

I highly recommend using less baking soda. Start with half, and maybe even down to 1/4 tsp.
However the loaf still tasted good, and the sour cream glaze is awesome!

**I made this again with HALF the baking soda and baking powder, and it is so much better! It's just incredible, so much more flavour, moisture and tenderness. So make sure to cut the baking powder and soda to 1/2 a tsp each! 5 stars now! *****
