Potato Cakes with Bacon and Tomato Relish

- 900g potatoes, peeled shopping list
- 1 tbsp snipped chives (3cm lengths) shopping list
- olive oil spray shopping list
- 8 rashers bacon, trimmed of fat shopping list
- tomato Relish: shopping list
- 2 tspn olive oil shopping list
- 1 onion, chopped shopping list
- 6 tomoatoes, chopped shopping list
- 2 tspns balsamic vinegar shopping list
- 1 1/2 tspns sugar shopping list
- sea slat and cracked pepper shopping list
- 1 tbspn flat leaf parsley- chopped shopping list
How to make it
- Relish:
- Cook onion with a spray of oil 4 mins or until soft.
- Add tomatoes, viengar and sugar- cook about 20 mins or until soft and pulpy.
- Stir through salt, pepper and parsley. Cover and set aside.
- Potato Cakes:
- Roughly grate potatoes. Place in sieve and squeeze out excess liquid.
- Transfer potato to bowl, add slat, pepper and chives and mix to combine.
- Heat oil in non stick frypan- add spoonfuls of potato mix and flatten to form round cakes about 10cm in diameter.
- Cook 3 mins each side or until golden brown.
- Dain on anbosrbent paper and keep warm.
- Cook bacon until crisp and golden.
- To serve, divide the potato cakes between plates, top with tomato relish and bacon.
