How to make it

  • preheat oven to 375 degrees and grease muffin pan if you are not using muffin liners.
  • mix together 1 1/2 C flour, baking soda, baking powder and salt. in another bowl, mix together bananas, sugar, egg and melted butter. make sure to slowly temper the egg/banana/sugar mixture before pouring all the melted butter into the bowl so the egg does not cook.
  • pour banana mixture into dry ingredients and mix until just moistened. spoon batter into muffin cups.
  • in another bowl, mix together brown sugar, 2 T flour and cinnamon. cut in the butter until it resembles a coarse meal. sprinkle amply on top of the muffin batter.
  • bake muffins from 18-20 minutes or until a toothpick inserted in the middle comes out clean.

    Jan 13/17 This is a great recipe. The muffin was light and fluffy and the streusel was fantastic. I did get a light taste of banana which everyone did enjoy but if you want a fuller flavour of banana then I would suggest adding a little banana extract or more bananas. Will be making again

    Just made these (literally within the past half hour) and they are DELICIOUS. They are not as banana-y as I wanted them to be, but the texture is amazing, and I added chopped almonds and walnuts for a crunch. The topping was tough because we did not have brown sugar, but I used 1/3 regular sugar and 2 teaspoons of molasses and made my own! Delicious! This one is going to my iPad cook book =)

    Moist, light and flavorful muffins. The muffins were good with or without the topping. I mashed in 4 bananas since my bananas were in average size. This will be my only recipe for banana bread / muffins. Thank you for posting. SIMPLY DELISH!!!

    These were incredible- the entire family loved them. I made them a little healthier by using half whole wheat flour, and I made them with smart balance margarine because of a milk allergy. They still came out perfectly.
