Spicy Rice Pilaf

- 1/2 cup chopped onion shopping list
- 1 TBS olive or vegetable oil shopping list
- 2 cups low fat chicken broth shopping list
- 1/4 cup dry lentils, rinsed shopping list
- 1 can (16 oz.) red kidney beans, rinsed shopping list
- and drained shopping list
- 1 cup salsa (hot or mild) shopping list
- 1 cup uncooked long grain rice (Uncle shopping list
- Ben's) shopping list
- 1 cup frozen corn shopping list
- 1 jar (2 oz.) diced pimientos, drained shopping list
- (optional) shopping list
- 1 tsp chili powder shopping list
How to make it
- In a saucepan over medium heat, saute onion in oil until tender. Add broth, and lentils; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in remaining ingredients; bring to a boil. Reduce heat, cover and simmer 20-25 minutes longer or until lentils and rice are tender.
