Gluten Free Pineapple Muffins

- 2-cups G.F. flour shopping list
- 1/2-tsp xanthan gum shopping list
- 1/2-cup granulated sugar shopping list
- 3-tsp baking powder shopping list
- 1/2-tsp salt shopping list
- 1-egg shopping list
- 1/4-cup cooking oil shopping list
- 1-cup milk shopping list
- 1/2-cup well drained crushed pineapple shopping list
- ........................................................................ shopping list
- gluten FREE RECIPE: G.F. flour Mixture shopping list
- 6 cups of white rice flour shopping list
- 2 cups tapioca flour shopping list
- 1 cup potato starch flour shopping list
How to make it
- Measure flour, sugar, baking powder and salt in large bowl. Stir
- Make a well in center
- Beat egg in small bowl until frothy
- Mix in oil, milk and pineapple
- Pour into well
- Stir just enough to moisten. Batter will be lumpy
- Fill greased muffin tins 3/4 full
- Bake in 400* oven for 20-25 minutes. Remove
- Wait 5 minutes for easier removal of muffins
- Serve warm
- Makes 18
- Variation: Add some raisins and sprinkle sugar, cinnamon on top.
