Easy Easy Country Corn Casserole Recipe

How to make it

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter.
  • Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown.
  • Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted.
  • Let stand for at least 5 minutes and then serve warm.

    I can't eat bread so instead of Jiffy mix I used 1 1/2 cup gluten free bread crumbs. I also added a box of sautéed mushrooms, 1 egg, 1 sautéed onion. 1/4 of 80z package of cream cheese. This casserole was devoured.

    Add a couple of tablespoons of sugar for a richer, sweeter flavor. You will be glad you did.

    Lana this sounds incredible, I have made corn bread with cr. corn, but to add the sour cream and cheddar cheese is just over the top. Thanks

    Lana this sounds wonderful I never had anything quite like this before. I am a big fan of corn bread and corn in general is one of my favorites.

    Mrtnzangel8, Yes Paula does make one also..but this recipe has been around in the south for many
    MANY years. Hers may be the same though. :)
