Southwest Chicken and Rice

- 3/4 pound skinless, boneless chicken breast shopping list
- 2 tablespoon olive oil shopping list
- 1 15 oz jar of salsa shopping list
- 3/4 cup chicken broth shopping list
- 1/2 cup greeen bell pepper shopping list
- 1/4 cup sliced ripe olives shopping list
- 1 cup quick cooking rice shopping list
- 1/2 cup shreaded chedar cheese or monterey jack cheese shopping list
How to make it
- Cut chicken into 1" pieces.
- In a large skillet cook and stir chicken and bell pepper in hot oil over medium heat until chicken is no longer pink. (3 to 4 minutes)
- Stir in salsa, chicken broth and olives and bring to a boil.
- Stir in rice, remove from heat. Sprinkle with cheese.
- Cover and let stand about 5 minutes, or until rice is tender.

- This can also be made with regular cooked rice. I like to use cooked brown rice.
