Awesome Faux Potato Chowder

- 1 head of cauliflower (cleaned & chopped) OR shopping list
- 1 frozen 10oz bag of cauliflower shopping list
- 1 16oz roll of sausage shopping list
- 1 8oz block of cream cheese shopping list
- 8oz of canned mushrooms + liquid shopping list
- 1/2 C. EACH of onions & celery shopping list
- 2 chicken bouillon Squares (Knoor brand in Spanish Food Section) shopping list
- 2 C. water shopping list
- 1/2 C. Half & Half shopping list
- ~~~~~Alternate Ingredients~~~~~ shopping list
- You can use potatoes instead of or added to the cauliflower shopping list
- You can use cream of mushroom soup instead of the 1/2 & 1/2 and canned mushrooms shopping list
- Some roasted chicken thigh meat would also be really good added to this or in place of the sausage shopping list
How to make it
- Brown Sausage in the bottom of a Dutch Oven on Med. heat
- Add Onions & Celery to cook in Sausage drippings until tender
- Add Cauliflower ( froz/raw or cooked in microwave)
- Immediately add Chicken Broth & Water & bring to a slight boil
- Then scrape up the Yummy stuff from the Sausage and Vegis cooking at the bottom of the pan
- Add Mushrooms
- Cook until Cauliflower is tender
- Turn down the heat to Low
- Add Cream Cheese and break up with spoon
- Stir until well blended
- Lastly add your Half and Half
- Stir for a min more to ensure your chowder is heated through evenly (but do not let it come to a boil)
- Serve & Enjoy!
