Lime Squares

- 2 Sticks margarine shopping list
- 2 Cups flour shopping list
- 1/2 Cup Confectioners sugar shopping list
- 4 Whole eggs, Beaten shopping list
- 1/2 Cup Fresh Persian lime juice shopping list
- 2 Cups sugar shopping list
- 1/2 Cup flour shopping list
- 1/2 Teaspoon baking powder shopping list
- 4 Drops green food coloring shopping list
How to make it
- Preheat oven to 350
- Base:
- Melt the margarine and mix in the flour and sugar. Press into a 9x12x2 greased pan.
- Bake at 350 for about 20 minutes. Remove from the oven.
- You want this crust to look firm but not brown.
- Meanwhile, make Topping:
- Mix the eggs, sugar, juice, flour, food coloring and baking powder together and pour it over the baked base. The base does not have to cool any.
- Bake the Base and the topping together for about 25 more minutes at 350 degrees.
- Cool and sprinkle with confectioners sugar. DO NOT CUT UNTIL VERY VERY COOL then cut into squares.

The weather here in Portland has been HOT for several days. (we are used to 60 degrees and rain, this 90 degree weather knocks the wind out of my sail!)
