Pierogies

- Filling: 1/2 lb cheese(chedder or whatever you like!) shredded shopping list
- 1/2 c mashed garlic potatoes(add afew cloves when boiling potatoes and mash along w/ potatoes) shopping list
- 1 lb bacon-chopped & cooked crisp(save drippings) shopping list
- Dough: 2 c flour -sifted shopping list
- 2 lg eggs shopping list
- 2 tsp salt shopping list
- 1/3 - 1/2 c cold H2O shopping list
- 1tbsp salt shopping list
- sour cream shopping list
How to make it
- Filling:combine together in a bowl but only using 1/2 the bacon
- Dough: combine flour,eggs,& salt.
- Add h2o little @ a time-just until moistened & workable & holds together
- knead for a few minutes
- cut dough in half
- roll one half out to 1/4 " thickness
- cut dough into 4" circles
- for each perogie place a Tbsp.of filling in center of dough
- fold over to form a 1/2 moon
- crimp edges together w/ fork tines
- reap w/ other half of the dough
- Boil a pot of water
- when the water is boiling add 1tbsp salt
- add perogies
- cook 5-7 min.( they will float when done)
- in a frying pan saute' onions in some of the reserved bacon drippings
- add perogies and fry to desired texturee (I like them a bit crunchy on the outside!)
- serve with sour cream-add the rest of the bacon as garnish
- ENJOY!!!
