Lemon Curd

- 6 tbs butter, softened at room temperature shopping list
- 1 cup sugar shopping list
- 2 large eggs PLUS 2 large egg yolks shopping list
- 2/3 cup lemon juice shopping list
How to make it
- Beat together the butter and sugar with an electric mixer for about 2 min. Add the eggs and the two extra yolks. Beat for 1 min. Mix in the lemon juice. The mixture will look curdled-that's ok, it clears up as you cook it.
- Transfer mixture to a saucepan. Cook at medium heat until it looks smooth, and the curdles disappear. Increase the heat a little to medium high and cook, stirring constantly, until the mixture thickens, for about 15-20 min. Be careful, you might have to turn it down a bit. Don't let it go over 170ยบ on a candy thermometer if you have one, but don't panic if you don't. Just be careful to not scorch it. Don't let the mixture boil, and don't forget to stir, stir, stir!!
- This is well worth the time it takes to stir, it's very yummy. It's tart, so next time I think I'll increase the sugar by two tbs or so. Everyone else liked it fine the way it was...I have a sweet tooth!
- Remove curd from heat and pour into a bowl. Cover with plastic wrap but press it onto the surface so a skin doesn't form. Cool a bit on table then put in the fridge to cool completely. It will thicken further as it cools. You can then transfer it to a jar, or nice little jars for gift giving-makes a PERFECT Christmas present or hostess gift.
