Tofu Egg Tomato Stirfry

- 1 - 230 g package of egg tofu, sliced (can subitute with regular or firm tofu) shopping list
- 2 roma tomatoes, sliced shopping list
- 2 eggs shopping list
- 1 green onion, diced shopping list
- 1 tsp of soya shopping list
- 1 tsp of sugar shopping list
- olive oil shopping list
- pepper shopping list
How to make it
- Heat oil in a skillet.
- Add tomatoes and green onion. Stir fry until the liquid from the tomatoe evaporates. Add some sugar and soya. The sugar brings out the sweetness of the tomatoes.
- Add the egg tofu. Gently heat tofu through turning only once. There will be a slight golden colour to the tofu's edge but it will soft and fluffy inside.
- Break the eggs, beat and add to the skillet. Turn out on plate when eggs reached desired doneness. Top with some croasely grounded pepper.
