Best Chicken Cacciatore

- flour (for coating chicken) shopping list
- 8 chicken pieces (cut breasts to half size) shopping list
- 3/4 Cup olive oil shopping list
- 6 garlic cloves shopping list
- 10 white mushrooms, sliced shopping list
- 1 onion, peeled and sliced shopping list
- 2 green bell peppers, cored & seeded & sliced into 1/2 strips shopping list
- 2 red bell peppers, cored & seeded & sliced into 1/2 strips shopping list
- 1 Cup dry white wine shopping list
- 1 16 oz can chicken broth shopping list
- 1 28 oz can whole tomatoes, with juice, crushed shopping list
- 1 teaspoon Crushed red pepper shopping list
- kosher salt shopping list
- 1 teaspoon Dried oregano shopping list
- 3 Tablespoons tomato paste shopping list
- 2 Tablespoons Worchestershire Sauce shopping list
- 6 Leaves fresh basil, chopped shopping list
How to make it
- Put flour in a dish and coat the chicken pieces & shake off excess.
- Heat oil in large saucepan over medium-high heat.
- Add chicken in batches and fry until golden brown on all sides.
- When chicken is cooked, remove from pan and set aside.
- Add garlic to pan and cook until it is golden brown.
- Add mushrooms and saute for 5 minutes.
- Add onion and bell ppeppers and saute until the vegetables are soft, about 6-7 minutes.
- Add wine and let reduce for 1 minute.
- Add chicken broth, tomatoes, crushed red pepper, salt to tase, oregano, Worchestershire sauce and tomato paste.
- Return chicken to the pot and bring the liquid to a boil, stirring constantly.
- Turn down heat and simmer for 40 minutes.
- Stir in fresh basil just before serving.
- Serve with rice or pasta.
