Roasted Rack of Lamb

- 1/2 cup fresh bread crumbs shopping list
- 2 Tbs. minced garlic shopping list
- 2 Tbs. chopped fresh rosemary shopping list
- 1 tsp. salt shopping list
- 1/4 tsp. black pepper shopping list
- 2 Tbs. olive oil shopping list
- 1(7bone) rack of lamb,trimmed and frenched shopping list
- 1 tsp. salt shopping list
- 1 tsp black pepper shopping list
- 2 Tbs. olive oil shopping list
- 1 Tbs. Dijon mustard shopping list
How to make it
- Preheat oven to 450
- Put oven rack in middle position. In a large bowl,combine bread crumbs,garlic,rosemary,1 tsp.salt and 1/4 tsp. pepper. Toss in 2 Tbs olive oil to moisten mixture. Set aside
- Season rack all over with salt and pepper. Heat 2Tbs. olive oil in heavy large oven proof skillet over high heat. Sear rack of lamb 1-2 mins. on all sides. Set aside for a few minutes. Brush rack of lamb with the mustard. Roll in the bread crumb mixture until evenly coated. Cover ens of bones with foil to prevent charring.
- Arrange rack bone side down in skillet. Roast the lamb in preheated oven for 12-18 mins.,depending on degree of doneness you want. With a meat thermometer,take a reading in the center of meat after 10-12 mins. and remove from meat,or let it cook longer,to your taste. Let it rest 5-7 mins,loosely covered before carving throught the ribs.
