Healthy Blueberry Muffins

- 1 cup milk shopping list
- 1/4 cup canola oil shopping list
- 1/2 teaspoon vanilla shopping list
- 1 egg shopping list
- 2 cups whole wheat flour shopping list
- 1/3 cup Splenda shopping list
- 3 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 cup of fresh blueberries or 3/4 cup frozen blueberries, thawed and well drained shopping list
How to make it
- Heat oven to 400 degrees. Line muffin tin with paper cups.
- Beat milk, oil, vanilla and egg in large bowl.
- Stir in flour, sugar, baking powder and salt all at once, just until flour is moistened (will be lumpy).
- Fold in blueberries, then spoon batter evenly among tins.
- Bake at 20 to 25 minutes until golden brown.
- Remove and cool or rack. Serve warm is desired.
