Oven Fried Rice

- 2 cups long grain rice, uncooked shopping list
- 1 1/2 oz onion soup mix (1 pkg) shopping list
- 1/2 vegetable oil - I quite often use only 1/4 cup oil but the taste is better with the 1/2 cup shopping list
- 1/4 cup soy sauce - low sodium if you can find it shopping list
- boiling water shopping list
- 10 oz can sliced mushrooms shopping list
- 3 green onions, chopped shopping list
How to make it
- Pour the rice into a 2-quart greased casserole or 9x13" pan.
- In a large bowl or 4-cup measuring cup, combine the onion soup, oil and soy sauce. Add enough boiling water to make 4 cups.
- Pour the liquid over the rice, add the drained mushrooms and green onions and stir lightly with a fork.
- Cover and bake at 350 for 1 hour.
- (It cooks faster in the 9x13" pan so check earlier)
